This place is one of the best eateries in North America. My family immigrated from Poland in the 60-70's, so I'm very familiar with Polish flavors. You wouldn't believe how great the marriage is with Korean cuisine. They're like soul mates that come together to make each other 100x better.

We usually fry up kimchi and kielbasa together and serve it as a side dish or with rice and it taste awesome.

7 years I've worked with Korean guys in Poland and tasted a lot of Korean cosine. After about 2-3 weeks of food sharing as it is cooked traditionally in our countries we just started mix an match. Polish cottage cheese + kimchi = one of my favorite fillings for dumplings :D I remember that we were quite shocked how easily those two cosines mixes.

I am in love with this idea, because I'm Polish and I've been getting into Korean cuisine recently because I LOVE the flavour profiles and i love spicy foods - which I wouldn't get so much in Polish cuisine. Compared to some western european countries we use more spice, but it usually comes from stuff like garlic, horseraddish or black pepper and ocassionally paprika in dishes like bigos, so it's still pretty mild. And watching this one youtube channel focused on Korean cuisine I started noticing why the Korean flavours speak to me so much! From stuff that's accessible both here and in Korea we use a lot of similar vegetables - and I'm looking specifically at cabbage here, which we use A LOT of. Nappa cabbage is really popular here, sometimes it's easier to get than plain cabbage. Lots of carrots, lots of cucumbers. Also a lot onion (we ironically call ourselves onionland a lot), garlic, chives, but most importantly? Noodles, dumplings, eggs. and MEAT. Pork belly especially, which we it a lot! We eat lots of meat, and lots of flavours I noticed Koreans enjoy can be found in polish cuisine. And vice versa, which like i mentioned draws me to Korean cuisine! I've had Korean Bao with kimchi for the first time, and it reminded me of a classic dish we eat here that's also made with steamed buns! It's steamed buns with ribs, which are sometimes paired with fermented cabbage. Doesn't it sound like a Korean dream?

ok one more thing? Teokkbokki is basically just kopytka. I found out what it is and we have almost an EXACTLY the same thing except its made with wheat flour and potatoes or potato starch. I was SHOKED I don't know why they deep fried it here? Kopytka are also boiled : I

Had to laugh at this one. We discovered a few years ago, that kimchi goes great with grilled bratwurst.

Kielbasa translates into Sausage so when you say Kielbasa Sausage you are basically saying Sausage Sausage. Or Kielbasa Kielbasa, you name it.

+StoNeeLeGume Nah, mate. Go to a good butcher shop in any American city and you will not see it labeled *_Kielbasa Sausage._* Just like you don't see *_Bratwurst Sausage._* Neither Matt nor the chef ever said Kielbasa sausage...they know what's correct.

Tosh T Yeah and only a small fraction of the country has access to a decent butcher shop lol. Go in most of the south or a lot of the southwest or Midwest and you'll have to differentiate. I usually just say Kielbasa , but if you roll up saying just sausage and expect to get a Kielbasa you'll be out of luck lol

Kimski is in the Bridgeport neighborhood, which is south of the loop and closer to Chinatown. K-town is north and slightly west of the loop.

All the food you have ever had and think you like are the result of fusion. All of the traditional foods of europe are completely based on ingredients and concepts from the Americas and China in particular. Especially italian food for example, Pasta and Tomatoes do not come from Italy.
