KL Hokkien Mee, the ‘black Hokkien mee’ is one of the most famous dishes in Kuala Lumpur within the Chinese community in Kuala Lumpur. This easy and authentic Hokkien mee recipe replicates the ‘wok hei’ needed to braise the noodles in the special soy sauce for the best flavours.
There are three types of Hokkien noodles and this recipe is the famous dark noodles from Kuala Lumpur. Using ‘tai lok mee’ or thick noodles, this Hokkien mee dish is one of the staple dishes in most Chinese hawker eateries. Tossed in hot wok over burning charcoal, Locals crave for the soft noodles tossed in a hot wok over burning charcoal as it captures the smokiness of heat in the air. While it looks very difficult, the dish is very simple to recreate at home. There are a few things you'd need to look out for to dish up a plate of authentic and fragrant KL Hokkien Mee. After all the preparation and cooking, you will want to serve noodles which are silky and deep in flavour (yes, with the umami flavour most hawkers have decided to forgo because of the rising costs).

Where to buy Hokkien noodles?
Hokkien noodles are sometimes called by their appearance, ‘yellow noodles’. The noodles are sold fresh or wet in vacuum sealed packaging. If you are in Malaysia or Singapore, you would be able to find these noodles in wet markets or supermarkets.

Looks so delicious! Could you also do the KL yin yong noodle 广付炒鸳鸯 recipe in the future? I tried cooking it several times but it's never close to how it tastes in KL.

Looks delicious! 🤤 I actually have leftover anchovy powder that I made last year (a condiment for when I made Japanese tsukemen noodles). Not fried though... bellies removed, rinsed, dried again/roasted in oven, then grind into powder

I just bought dried-smelt(Jeprox) from an Indonesian grocery. Is that same/similar as dried-flounder? I also have dried-anchovy(salty) and bonito/katsuobushi(sweet, very Japanese and mild).. but I'd assume those are too very different.

This is a mouthwatering recipe which I definitely want to try soon. Since I live in Europe it is hard to get the Malaysian caramel soy sauce. I was wondering whether Thai black soy sauce approximates the taste of the Malaysian caramel soy sauce. Does anybody know?

You're so excellent for this. I can do this, but I can substitute the pork lard with dried prawns/dried shrimps. Dried prawns are really popular in Indonesia when adding the foods, including this. Because it contains the umami flavour and enhance the flavour become more tasty or delicious. That's it.......

Is Chinese Dark soy sauce (Lee Kum Kee, Pearl River Bridge) and Caramel soy sauce (Yuen Chen, etc.), different, similar or same?? Also, is Sweet/Kicap-Manis different, similar or same than Caramel soy sauce?? I know Chinese Dark and Kicap-Manis is very different... but I’ve never had a bottle of Caramel sauce before. 🤔

Ajinomoto has for some time been marketing anchovy powder in their range of cooking ingredients. Wonder whether it can be used as a substitute for flounder powder? May not be the real deal but can it be a worthy substitute?

Great question. You might want to ask our community or cook on the website. My personal opinion is that Ajinomoto could be a substitute. However it cannot be a full substitute since it doesn’t have the fishy savoury flavour. - Admin

To be precise, in kl it's called hokkien char mee which translates to hokkien fried noodle. In penang, they also have their own version of hokkien fried noodle which called as hokkien char which use the normal yellow noodle.

This is way too tempting... Here I am stuck with my fish congee due to food poisoning... no fun :( In Penang, we have this dish too but it's called Tai Lok Mee (don't know why)

Oh nooo, get well soon!! In Penang, Hokkien mee is what KL-peeps refer to as prawn mee. Sometimes, they do call is tai lok mee in KL too. 😌

If you don't like "pork lard", just skip it or you can substitute with "dried prawn/dried shrimp".

You can always use chicken... For the crispy pork lard, you can make fried chicken skin, search the video 'schmaltz' for the method (Halal Hokkien Mee in PJ use fried chicken skin as crispy pork lard substitute)...or you just can omit the crispy pork lard...hope it helps

Hi Syahiirah, of course! We always have tips on the recipe where we provided substitutes. In this case, halal and vegetarian versions. You can check it out here where we recommend chicken fats. www.nyonyacooking.com/recipes/kl-hokkien-mee~jN1Kwp8gj If you are already using sole/flouder fish, I wouldn't recommend dried prawns as it might be too fishy. Pork lard is added for its oil that is rendered and fried fat chunks. Anyway, it is explained in detail in the recipe :)

Instead of pork lard you can also use duck fat and chicken. Duck fat you can buy in good supermarkets. But a bit expensive. Or you can render your own fat from chicken skin if you have time ;)
