I always love to mess around with old knives I find at flea markets.. I found this in a "All 1€" bucket. Is there anything better than "All 1€" buckets by the way?!
The thing I love the most is that these old blades have so much charater and odd features.. Take this one! The steel is so old you can see many impurities after the etch, just like in damascus steel! And it has been differentially heat treated, meaning that the edge is super hard (between 55 and 60 Rhc) while the spine is still very soft thanks to the edge quench it must have been used for this blade back when it was heat treated.
Furthermore, having to deal with so many materials limitations really makes each project of this kind unique in some way or another, and I like that a lot!
In this case I decided to go for a double brass bolster, inspired by old folding knives, and the separation between brass and wood is done at a 45° angle for extra fanciness! Jokes aside, I wanted to try this as a technique challenge. I don't really have precision tools or machine to make this fit reliably, so I wanted to try doing it all by eye with just the belt grinder and a "v" block as 45° reference. I have to admit I am surprised by the fit! It's not 100% perfect but pretty damn close. Better than I expected anyway!
And thanks to the brass pin in the bolster and the angle between those the wood in between is held in place just by one singe pin, no glue at all! That's something you probably don't want to see in a chef's knife as water can infiltrate, but I'll keep this one for me and I'm happy to have it all fit without glue just for the fun of it.

0:50 Electrolysis: water and sodium carbonate solution, parts connected to negative side and steel sacrificial anodes to positive sice of a DC power supply (car battery charger). 2-3 hrs at 5amp.
3:44 Refine shape and grinding new bevels on 2x72 belt grinder, edge kept cool with water bucket
4:43 Hand sand to 600grit sandpaper
5:09 Etch in ferric chloride
5:30 Satin finish with fine steel whool

@@mattperkins7038 I believe he used wood stabilizer and put it in a vacuum chamber to make sure it penetrates then cooked it to make sure the wood was dry.

In my opinion the old knife has a nicely shaped handle, and therefore a restoration should have followed up on this. If you change the handle like here, then you ought to have used a lighter color kind of tree - oak perhaps - and not bronze metal. The bronze color doesn't end up well with the blade's color.

The blade is a joke because he didn't get rid of the pitting and deeper corrosion. It's one thing if it's going to be a "wall hanger" but entirely different if it is going to be used.

My thoughts exactly, the craftsmanship in the handle is beautiful and would go great with a steak- or butterknife design. For a chefknife at least I prefer sth more ergonomic like groves to prevent slipping backwards vor fowards. But to each his own.

@@Briguy1027 English is not my first language, what I meant with grooves is the handle Being thinner close to the blade and having a thicker part or knub at the end? You know sth that keeps your hand from sliding off the back. Like this images.app.goo.gl/WsCHJ3VaB26hoZyS8. The very square-ish shape makes the handle not very ergonomic.

I'm not even so worried about it not going with the blade, and although I like the profile with wood/steel/brass, it's just FAR too square for my taste. ergonomically and esthetically.

@@mayachaoui814 I don't think porosity is the term. I'm thinkg bits of food can get deposited in the pits, allowing bacteria to grow right on the blade. It's use after that could be suspect.

ClapTrap I have a chefs knife with a Damascus blade but it doesn’t look like this guy’s. It’s more like, swirly and textured, but not pitted. I’ve never seen a chef’s knife like this used in cooking. I shall begin the hunt. Lol

Yeah, he needs to dremel those out. Too much focus on the handle and aesthetics. When I restore, I go for function. People that want a perfect looking blade should just buy a new knife. plus my 13 kiwi knife is sharper. Those push cuts look forward rough. Seems like the steel lost its temper from getting too hot on the belt sander and now its soft.

There are Japanese knives with this type of finish intentionally put on them. It’s called nashiji, or pear skin finish, to help with food release.

You do a really great job on your videos. 1) No distracting music 2) No unnecessary yakking 3) You show small pieces and other important things to your viewers using close-ups 4) No wasted time showing repetitive tasks....you show just enough to give us the idea and use faster speed to save time yet still show longer tasks I wish every RU-vidr did their videos this well.

Given time what happens when you glue two unlike materials together that expand and contract at different rates? I've had this happen to chair seats even when the entire thing was oak. About all you can do is kept the blade cleaned with a damp cloth and oiled and never, ever, get the handle wet.
