Made it tonight. Frying powder was interesting. Nobody around here had potato flour (Amazon had it) and I have to say, it was delicious. My daughter couldn't get enough. Spice builds but never too much, Definitely a keeper! Thank you very much. The double frying is a game changer.

Scientifically speaking, it may be safe without washing, but since chicken usually has a bad smell, it is better to wash it under slightly running water as it does not have a bad smell. If you don't have potato starch, you can also use normal flour. I don’t think it needs to be too crispy because the seasoning sauce cover to the outside.🥰
