Sharing the Kung Pao Chicken Recipe we use at home. We got this recipe off youtube, but made a couple of revisions due to ingredients availability and our taste preference. We have not made this recipe hot for our son ♥️.

450 grams chicken thigh fillet (cut to about 1 inch cubes)
*fully defrosted and excess water taken out (use a kitchen towel to take out excess water)
Marinate chicken:
Season with salt and ground black pepper
1 tbsp soy sauce
1 tbsp sesame oil
4 tbsp potato starch
Marinate chicken for 30 minutes
Kung Pao sauce:
1 tbsp white sugar
1 tbsp soy sauce
1/2 tbsp white vinegar
2 tsp Hoisin sauce
4 tbsp water
1 tsp cornstarch
Other ingredients:
1/2 bulb garlic (chopped)
1/2 tbsp ginger (paste or fresh garlic)
1 zucchini (cut to cubes)
1 big bell pepper (chopped)
1/4 cup roasted peanuts
chilis (optional)
1. Stir fry chicken first until cooked (see video for reference on how it looks like). Set aside cooked chicken in a clean bowl.
2. Using the same oil, stir fry garlic, ginger, chili (optional)
3. Add zucchini and bell pepper (stir fry until zucchini turns very light brown)
4. Add chicken and peanuts (cook for about 3 minutes)
5. Add the Kung Pao sauce (wait until sauce thickens, about 5 minutes)
