Well technically Nintendo wouldn't be too mad. I mean, there's pretty good ways already in place that keep the player from going too far (The "falling to your death" when on land for example), so it's not like it breaks the game too much. If anything, it just is showing the slight gaps in the programming for cool things, like the ability for endless flight by minecarts

radical nan I knew a guy that worked at one of the botw boots and his friends were able to get of the plateau but it caused the game to crash. The demo version only has the great plateau loaded, the rest is just background, thats why we were also unable to see monsters and horses down there in the demo :p

Sadly, even if you do find a skip, fighting calamity Ganon instantly kills and teleports you to the plateau. So the only way to actually do this is to find a way to skip calamity Ganon.

Honestly, I don't think speedrunners would use this trick even then. You need the paraglider to do any stasis launches, and there's no faster way to get around.

As far as I know this trick would be useless for speed runs since the game won't let the game progress till that fog is lifted and the paraglider is gotten.
