I'm 77, diagnosed with ALS may 5, 2015 and neurologist said I had 2-5 year life expectancy. My maiden name is Godfrey and we were late for just about everything and guess I'm certainly carrying on the family tradition because I'm 3 years beyond my expiration date 😊 I'm confined to a wheelchair 24/7, sold the homestead and friend offered us their in-law apartment. The confined kitchen is narrow and my Permobile F3 chair can go into it but I can't turn around. I tried cooking but the space and I can't stand but for a few seconds I gave up trying UNTIL I found your channel. I enjoyed them as entertainment then several spoke to me and I have successfully made several of your recipes. I'm not as quick as you but I've surprised myself and cooking more often than I ever thought I would or could. Thank you both for giving me the inspiration to try, without you both it surely would not have happened 💗 I also love lemon and one of my many happy childhood memories is my mom's Lemon Sponge Pie, have you ever made one! Ma passed away age 95 when I brought her home with Hospice October 25, 2008, she passed Nov 4. Lemon Sponge Pie Ma's (Edith Godfrey of Raynham, MA)......... YUMMY Cream 3 Tbs butter & 3/4C sugar Add 2 egg yolks (one at a time) 1 Tbs grated lemon rind 1/4 C lemon juice 3 Tbs flour 1/8 tsp salt and mix well. Stir in 1 C milk Beat 2 egg whites until stiff but not dry and fold into lemon mixture. Pour into unbaked pastry shell Bake 425°F for 10 minutes. Turn temperature down to 300°F for 30 minutes. Don't cut hot, let cool to form sponge on top, custard like on the bottom.

I love your videos and recipes. BTW this is a very old recipe that was on Duncan Hines cake mix boxes in the 70's and 80's. The measurements and ingredients are the same except they didnt boil the water. It was called Pudding Pound Cake. I use it any time I make a cake from a mix. It's good for a decorated cake for occasions.
You can put the eggs in the mixer bowl, beat them then add remaining ingredients. Saves a dirty bowl. Looks delicious. I guess you could do this with other flavors. Nice Recipe. Thank You!
Made this to bring to my church group. It was a breeze to make and I liked that it made 2 loaves. I added blueberries because I had them and it was very good. Thanks for the recipe.
I've used this same recipe for 40 years .. but I make it a pound cake... but I use lemon jello.... no butter in the glaze... while the cake is still warm I poke holes in it then pour the glaze on it!! Yum yummy
That sounds really good, too! My mom makes one very similar but in a cake pan. She pokes the holes in it and adds a glaze. it’s so moist. Hers in orange flavored, however. This is very much like a cake- just made into loaves.
I love this!! I'm not a big fan of really rich and sweet desserts. But something like this is not so overpowering with lots of sugar. I make a quick banana bread with just a box of yellow cake mix, 2 eggs, and 3-4 mashed banana's (I mash them up by hand). You can also add 1/2 c. nuts (I like walnuts) if you wish. This makes a very thick batter. Divide between 2 greased loaf pans and bake at 350 for about 35 minutes. We eat one loaf and wrap the other in foil and zip lock bag to freeze for later. But it never stays in the freezer very long! 😉

I have no idea what's happened to the ending, but we will put this one in our schedule and "fix" it. Clearly, we're not professionals here! But it does sound like a really great excuse to make this wonderful bread again! Find the positives I believe!
Thank you for the informative videos with such good food. When I make lemon bread I always put 2-3 Tablespoons of poppy seed in it. Have done this for years.. Keep up your fine presentations please!
This looks delicious. I love lemon bread. Bob Evans use to sell lemon bread but the last few times I've been in there, they do not sell or make it anymore. So now, thanks to you, I can make it myself.

Looks great. My question is, how come the eggs don't start to cook when you pour in the boiling water? I always thought you had to temper the eggs with the hot liquid.
This looks delicious!!! Is there a certain technique of adding the water so it doesn’t cook the eggs before I get it mixed? I am having a rough time baking lately so I want to make sure I have the process right and not ruin the cake.

F.Y.I. 6 tablespoons of liquid equals ¼ cup plus ⅛ or 2 tablespoons. I have one of those liquid measuring cups that you can see the measurements from the top as well as the traditional sides & one of them is a 4 tablespoon or ¼ cup. I believe it's made by Oxo. I love them because I don't have to bend down to eyeball it while it's on the counter or trying to hold it up & hope I'm holding it straight just to read how much is in there. It measures 1, 2, 3, & 4 tablespoons of liquid only. Don't use liquid cups to measure dry & don't use dry measuring cups for liquids cause you're not getting an accurate reading. I recognize this recipe as a pound cake I make using the box cake. I've made the lemon, chocolate, and yellow ones in my tube or bundle pan. I love them! I bet a yellow cake with pistachio pudding and some pistachios in the cake would be delicious, too!Sometimes, I add a little shredded coconut in the lemon. I love coconut & lemon together as well as the blueberry with lemon! I just made a birthday cake for a friend using a yellow box cake & instead of adding the water & oil, I used equal amounts of coconut milk, a tiny bit of coconut extract & my vanilla extract, and a little shredded coconut in the batter. After it was completely cooled, I finished with very well drained crushed pineapple in between the layers. I whipped up some lightly sweetened whipped cream with a dash of my homemade vanilla extract & frosted the whole cake. Then, I sprinkled a little more shredded coconut on top. Delicious! It's one of my favorite cakes! It reminds me of my childhood when my grandmother used to make that cake, except she made her cake from scratch. I don't remember if she used coconut or not. But, either way, it's delicious! Love your channel! ❤❤

I didn’t have any blueberries but I did have some flaked coconut so I added that. I also added a hint of orange and blueberry juice to the glaze I wish I could share the results. Made it twice... its great. The only problem is that my mother-in-law likes it and that means she will be over to the house more often. May not make it again for awhile.
We have always made this in loaf pans. Most box stores, like Wal-Mart, will have loaf pans for sale and they aren't too expensive, and they are a nice investment in your kitchen. I do hope you get to try this bread. It's such a nice recipe. Thank you so much for watching our channel.
