PROBIOTIC BOWL
INGREDIENTS
1 tsp coconut oil
½ cup extra-firm organic tofu, diced
¾ cup asparagus (cut into 1- inch bites)
1 Tbsp miso paste
1 Tbsp liquid aminos (or tamari)
2 cups red quinoa, cooked
½ cup carrots, grated
¾ cup pickled beets, diced
½ cup pickled purple onion
1 organic mini cucumber, cut into ⅛-inch half-moon slices
Sesame seeds (for garnish)
For Dressing
½ cup full-fat Greek yogurt
2 large garlic cloves
1 tsp dry dill weed
1 tsp red pepper flakes (optional)
In a frying pan, heat coconut oil over medium high heat.
Add tofu and asparagus. Cook until they start to brown.
In a small bowl, dissolve miso paste in liquid aminos, then add to the pan, mix well.
Lower heat and simmer until liquid is mostly absorbed.
In a food processor combine all the ingredients for dressing (except dill) and blend until smooth. Then add dill and mix well.
Divide quinoa into 2 bowls, 1 cup in each. Top with tofu and asparagus mixture, carrots, beets, onions, cucumbers, and a large dollop of dressing.
Garnish with sesame seeds.
For a Snack, Tracy recommends dark chocolate or a GoMacro Bar.
And remember to drink plenty of water
Tracy also has one cup of coffee per day with oat milk.
