As a southern girl, I have eaten turnip greens and collard greens my whole life, but I never considered sauteing them! Definitely going to make this recipe but with veggie broth instead of chicken broth as I do not eat meat but yum! Thanks for sharing this recipe!

My favorite green is Swiss Chard. The stems are tender, so the whole leaf can be used. I saute in extra virgin olive oil, with garlic, salt and pepper, and a hot banana pepper, sliced down the middle. When washing the greens, drain, but leave a bit of the water on them. This helps to wilt them down and cook. No chicken broth. This is the Italian way. If you get the really large leaves, they can be blanched quickly and then sauteed. I have them growing right now. A good fall and early spring green to grow, they like cool weather.

I’m going to try your recipe. Chard and collards mixed is also amazing. All you have to do is cut the collards thin (chiffonade) and add the chard last.

I like collards...but I love Mustard greens! I fix them like my grandma did...which is not the most healthy way...but it so good! I blanche them, fry up some fat back in a cast iron skillet, put my blanched greens in the skillet and cook till tender. Add a pone of cornbread and you are ready for the meal of a lifetime!

If you swerved the kale trend due to the bitterness, you just might enjoy collard greens, they’re robust but not bitter, and you can see, he didn’t have to drown them in other flavors to balance them. If you’ve had Zuppa Tuscana at Olive Garden, the greens in their recipe are the Italian version. My late mother in law and BF asked a server for the recipe. Idk how or why he knew it, but at any rate he rattled it off, my sweet Mildred replicated that recipe a short time later, now I’m probably biased (not really) but hers was so much better, more rustic, and it got me interested in cooking Collards. That’s my job every gathering now.

I love sautéed baby spinach. I only use a little olive oil, garlic and salt, and fried cornbread to go along with 'em!

Thanks Bobby - It may be a simple recipe, but I learned something and that is to cut the leaves into smaller ribbons when time is limited rather than using larger pieces: a quick way which is great when it's just me and I want to save some time. ME from PA

I boil a smoked turkey neck until the meat falls off the bone. That water is used for my greens with onion and garlic. I cook low & slow in the crockpot.

I’m a person who loves collard greens. And all of my friends have taught me how to cook them for hours. Jamie look good but I don’t know if it’s really had enough cooking time. I’m just a little confused

I have tasted collard greens every which way and made by those that have said “oh but you haven’t tasted mine” LOL YUCK! BUT I do cook them for my man who loves them and your recipe looks like a keeper especially when I’m limited for time. THANK YOU 😊 Good to see you

@@heidid5275 The collards cook down really fast! I overstuff my 4 quart pot, put a lid on it, and add more collards when there is room in the pot. My burner is on high during this process and it doesn't take long at all. Try it...I think you'll be surprised!

If you COOK with any animal products it's not vegetarian, even IF it's been cooked off. To make it vegetarian, use vegetable stock.

Of all the greens there are, collards are my least favorite. I was raised on turnip, mustard, cressy greens.

Those greens didn’t look good, something was missing you don’t always have to use meat in cooked greens but those just didn’t look tasty.

I think he needed to use a good quality extra virgin olive oil and cook them down a bit more. Paula has said many a time that she doesn't care for that, so probably none to be found in that kitchen. They still looked like they would have a crunch to them. That's a tough green, they need to be cooked.

There is trick to cooking them he didn't mention. The younger the greens, the more tender if cooking like he did.....but the older greens can take much longer to break down and requires a longer cooking process. So try to find out if you buy them locally from a farmer. Honestly his looked like store bought! But that's okay....
