You should look into miracle rice that is zero carbs. It has no taste but takes on any flavor you layer into it. Might be a good option for very carb conscious individuals.
Wes not gonna lie but you’re the reason I’m going back to keto. I’ve been so frustrated with trying a million recipes to only find it tastes horrible so I thought everything keto just tasted horrible. I started following your recipe ratings and omg, life saver! Love you and keep it up! ❤️
I make a "recipe" dinner once in a blue moon. But for days to days dinner, I like to cook straight forward. Meat w/ S&P or some other dry spices, and a simply cooked veg. Steam, bake or pan fry. I find sometimes recipes make one feel stressed trying to get them "right" etc. And I like to taste the separate things I've made instead of having them masked with goops and 101 ingredients. And I cook from the hip. Just make it up as you go.
I promised myself a while back that I was DONE with riced cauliflower recipes, it makes such a mess! But then you had to bring out the cream cheese and smoked salmon...
I couldn't watch this as soon as I got the notification, but I did pull it up and (mostly) listened to you on my way home from work :) You get me to and from work ALOT...LOL...So, here I am, watching what I could only hear (mostly) in the car. I also defy your statistics. I watched one video and subscribed so fast it would make your head spin. I make sushi all the time but use mashed boiled egg with mayo. I have converted many friends to this easy yummy lunch. I love your videos you do such a great job and make me smile every time i watch you, thankyou
@@rebecaw.489 I am guessing you are correct. And it may be worth trying....but another thing that could possibly work is a Japanese omelet with sushi vinegar whisked in.
I've been in the Wesley school of cooking too long. Before he even finished and tasted, I was already thinking about how I would combine the best of the two recipes into one I'd make myself.
I just make them with cream chease or with Laughing cow cheese triangles, instead of the rice and it works amazingly well. You don't even feel the rice is missing.
@@southernboycookin5383 What I do exactly is that I add 2 times more volume of cheese than salmon, add chives, cucumber, avocado, sesame seeds and chilli (if you are into spicy maki ). You don't necessarily need to spread the cheese on the nori sheet, just put it along the salmon and then just wrap the whole thing, like you would do with a normal make roll. What helps as well is to add more filling(2 to 3 times) than a normal sushi, since your don't have rice. elsewise they woud turn out too thin.
This is going to be a life saver for me!! I eat rice almost every day as a Japanese American, but need to lose weight so badly. I make a lot of homemade sushi/Korean style Gimbap and Onigiri for lunch and am so looking forward to using the cooked cauliflower rice instead of my usual Calrose rice! I made the 1st one w/ cooked cauliflower - tasted REALLY good & not at all like cauliflower. Next time I’ll do less cream cheese & more cauliflower rice ( I used 1 bag & wrung it in dishcloth - so didn’t seem like enough) - i dipped in soy sauce & the sushi picked ginger was already sugar free - I LOVE IT)
I have made it with the La Viva rice shaped shirataki for New Year and we all enjoyed it a lot. We did smoked salmon, smoked white fish salad a d lump crab variations. Oh, we made it just like the cauliflower version, just switching out the cauliflower for the “rice”
I've done twice and liked very much! The first time i bought the version mixed with a bit of sushi rice, and the second i made with konjac only rice. Using vinager and spices is very important, and i loved the result!
I just cook and rinse sushi rice until water runs clear then I put in sieve and run under cold water before I finish cooking by steaming with butter. I am type 2 diabetic and rice cooked this way does not spike my blood sugar with more than 2 points. So I ensure reading is low enough then I get stuck in and enjoy my sushi.
Learned the dry fry from Keto Twins and it truly does help. Learned to use plastic wrap between the nori and bamboo from Heavenly Fan and that too makes a huge diff in the cleanup!
This is how I broke an 85 hour fast. I made the cooked version for my sushi loving son. Cooked it too long but still used the paste as my rice. I had more of a puree. I used shrimp, avacado and cukes. Made a Siracha sauce and added pickled ginger and wasabi on the side. Coconut Aminos. Yum! My nori got too soggy. Was hard to cut. That's my fault. But once it was cool it cut better. It was yummy and my son loved it, so did I. I also discovered a yummy cauliflower cream cheese mash!! Yay! I'm a new subscriber.
The cooked version is definitely the way to go. Absolutely delicious! I used yellowtail tuna & real crab. My local sushi bar makes two different rolls that are all fish. No nori or rice, just fish & crab salad rolled up with more fresh fish. My favorite of those is called the "Naked Salmon." Thanks for the entertaining & insightful review!

I tend to be opposed to using cauliflower in place of rice, but I might give that cooked one a try. Sushi may be the only thing I truly miss from my carby days. I never thought I’d be able to have sushi again (other than stealing one piece and feeling guilty... let alone ever again feeling like I’ve had a satisfying meal). My word! This is fantastic! Even my sushi-loving 18 year old son loved it as did my wife! I used frozen cauliflower rice and it was nearly perfect. Might cut back on the amount of cream cheese next time by 1/4 to even a 1/2. But, damn son! Soooooo happy. Now to find something to use as a quality sashimi...

I never liked sushi or cauliflower, but II found this entertaining. I will eat tuna over some lettuce with bleu cheese dressing and some olives. I also love some smoked salmon with cream cheese on celery. hey, I subscribed to you years ago and watch all the way through. And autoplay made me watch several times. I enjoy sushi but haven’t eaten it in a long time. I have the kit to help me roll it but I haven’t tried doing it. Now I can watch you do it over and over. Well I did try to roll it once but not with any success. So I didn’t try it again. I used to enjoy it for lunch and I loved the wasabi. I am glad to come across this. Thanks!
Oh you did so well! I always cut my avocados into tiny chunks because I can never do what you just did. :-D Good on ya! The tuna ones need some red bell pepper in them for color, or paprika or what you did, black sesame seeds or something, just to make them look as pretty as the salmon rolls. I like to add fresh dill to the cream cheese in the salmon rolls (such a a traditionalist).

I made the My Keto Kitchen cooked version and it was really good for a sushi made without rice. I made a california roll and a spicy shrimp version. I made wasabi from the 100% powdered wasabi since the prepared type had sugar. I will definitely make this again. I love your videos. They have me cooking a lot more than I usually do. Wonderful video and great instructions! Thank you for trying out both the cooked and raw versions (so I don’t have to, lol). I’ve been making cauliflower sushi for awhile, now, and instead of using cream cheese, I quickly stir a beaten egg into the hot rice just before it comes off the burner. The egg coats the little “grains” of cauliflower and gives it a convincing chew. It works beautifully for making sushi (and also plain or fried “rice”).
I made my version of this last night and today. Only change I really made was to use canned lump crab meat as that was what I had. Delish!! Definitely scratches an itch. I wonder how pimento cheese would be? Hmmmmm. I also made my own eel sauce - soy sauce and sweetened with Splenda, reduced down. Minus the Mirin wine.
