Thanks, made carrot stew once. Only difference was I fried everything first then pour in the blended carrot last. Overcooking may reduce the nutrients in the carrot 👍
Pro tip. A lot of Nigerians don't realize that when cooking stews you do not really need tomatoes. Bell peppers is prefered. And to build flavor, fry about half an onion without chopping it into small bits and until it's burnt. When it is, take it out. The goal again is to build flavor.
I learnt this from my mum , try adding some curry powder when frying the onions and thank me later then if you add nutmeg and ….sprinkle a teaspoon crayfish powder at the end before bringing the stew down … flavour overload PS: it doesn’t taste like crayfish, I can’t explain it just try it first especially if you’re using fried or grilled fish

For non Nigerians, I noticed that Tatase is in way different from red bell pepper, cos you don't get tatase in some countries just like palm oil, stock fish etc, and one piece of red bell pepper is way more expensive than tatase. Most times in the country where I am, 2 pieces usually cost N700 in rate conversion to Naira... A woman once told me she likes watching Nigeria food on youtube but finds it hard to get those ingredients in the market.

Well done sis ❤❤.. Since I came to my brother's house I'm having tomatoes, in my home I don't know when I eat tomato again. I use lots of carrots, ball pepper, spring onions, garlic, ginger a'd squash and I use olive oil and coconut oil to cook....
I tried this and it didn't turn out good. Unsure if I probably didn't use the right ratio of carrot to the peppers and onion but it didn't taste good. Had to throw it away 😭😭 How much carrot did you please Ify ?
Yeah I mostly make my stews without tomatoes, saves cooking time and tastes way better lol. Hmm never heard of adding in carrots though. I should try 😅
The oil is just the way the steel needs it🥰 What is stew without the oil. Will taste really great. The only twist I will give it is onga stew to make it more red. Thumbs up cook

That was a lot of oil in the stew. The sauce looks flavorful with all the veg in there. I love that the sauce can be used anyway you want with just a change in seasonings
I think that the oil is reasonable given that whilst frying, there's a lot of splatter, we all know the drill, looks great, definitely give a try, although am not dependent on tomatoes except for jollof rice, now the price of carrots will go up 🤣🤣🤣, that's Nigeria for you ohh
