Schiacciata is a Tuscan flatbread made with the mix of a pre-fermented dough (Biga) and a main straight dough. It requires more yeast than normal focaccia or pizza as it's baked the same day the dough is mixed.
Its name in Italian literally means "Pressed Down", Schiacciare (to press down) to describe the act of removing the gases created by the rising of the dough. After a series of rest, the Schiacciata is being dimpled like normal focaccia to resemble the classic look, and usually stuffed with some great hams, cheeses, or salads. Very summery, truly good.

Hi Man, it's Mike Florence and I hope you well. I'm a seafood chef working in the County of Kent, England. I have an Italian heritage and spent years growing up in Florence, where they make Schiacciata flatbread. It's used in All'Antico Vinaio Deli in Via De'Neri. This is THE BEST presentation I've seen on how to make Schiacciata BRAVISSIMO!!! Hey Man, wanna try making the Schiacciata sandwiches out of All'Antico Vinaio??? Nothing but the best! I pretty much make 2 types of pizza now. Either neapolitan ( with 2 steels indoors or ooni outdoors) Or your recipe pizza Bianca sandwich style like this. And most of the time it's with scrambled eggs, bacon and American cheese!! Don't judge, it's simple and delicious!

So let's say that lately i'm in a quest to find a good explaination on how to make a good Schiacciata, i absolutely love it and i'm quite new at baking so it's not that easy to me. Anyway, i've been watching a lot of italian recipes and videos on how to make it, and man, i'm amused by yours because this is the one which results actually really looks like a schiacciata toscana! can't wait to try it out, but you already earned my sub! great work, looking forward to explore the rest of the channel!

Hey Eric, you can use a normal pan, but the blue steel pans are much better because of their heat conduction!

The instructions in the video are different than the instructions in your recipe Which should I use? Video shows adding the water before adding the salt. The written instructions say to mix in the salt then add the water.
