The Mangalorean fish curry is the perfect balance of spice, heat and sour. In this recipe episode, we cook up a seer fish curry from scratch, including a vivacious masala that lends itself well to any mild-flavoured fish like pomfret, kingfish, ladyfish, or even prawns. Its beautiful bright reddish-orange hue comes from the combination of Kashmiri & Guntur chillies I prefer to use in this traditional preparation from namma Kudla. Traditionally, the curry is prepared atleast a couple of hours ahead of meal time, thereby allowing the fish to soak up the flavoursome masala. Served with steaming hot rice, this is a curry that pleases the soul! Enjoy!

Ingredients to make Mangalorean Fish Curry
Serves 3 to 4
500 gm fish, marinated in ½ tsp each of turmeric and salt.
15 red chillies (I use a combination of Kashmiri & Guntur in the ratio 9:6)
1 tbsp coriander seeds
1 tsp cumin seeds
10 to 12 peppercorns
¼ tsp mustard seeds
12 to 15 fenugreek seeds I USED 15
A pinch of carom seeds (ajwain)
½ tsp turmeric powder
1 large onion, roughly chopped
10 cloves of garlic
½ inch ginger, roughl chopped
Tamarind, lime sized ball
5 tbsp grated coconut
400 ml water
Salt to taste
For the seasoning
½ medium sized onion
20 to 25 curry leaves
Coconut oil

Video is prolonged unnecessarily lot of repetitions and the use of the word masala is too much. This video could've been made in half the length of what it is. It must be a great recipe but I lost you half way.

Two suggestions. 1) Don't talk so..so... so.. so.. much. 2) Shorten this video to 3 to 4 minutes max. The actual cooking process is simplest of the simple. Absolutely no reason to make it so long and so full of empty words. Best of luck!

We add salt after adding fish. Otherwise some river fishes doesn't absorbe the salt. Add little salt while just boiling the masala and little after adding fish.

U don't have to chop the onions for a seasoning instead slice them... Don't make them brown... N u can add 2 green chillies as well... It takes the curry to another level .

Sir, this Manglorian Fish Curry out beats any other fish Curry made by any other community. I am honest to speak with regards to the same. He also said herbaciousness, which isn't technically an English word, but 100% of English-speaking people will know what you mean. The word is like a mixture of Herbs and "spacious", which would indicate there is a nice space of herb flavour, and the 'ness' indicates that it has this attribute. You could say it makes it more "herby", but that would be less romantic and a less elegant way to describe it. We should seek the herbaciousness.

This is more like goan curry if you skip ginger and ajwain. This fish curry looks mouth watering and looks just perfect in color consistency and I bet the taste as well.

In an authentic manglorean fish curry there is no concept of tadka or oil to fry the masala. My amma used to heat the mud pot, add the ground paste, add salt, hot water, curry leaves, 2 green chillies and let this curry boil for 5 minutes, add the fish or prawns or chicken and let it boil for 10 minutes. No other seasoning or tadka. Same for veg curries like basale, tauthe etc

I don't understand why it is so important to have the masala paste that "perfect" consistency, when all you are going to do is to add water to it in the pot and make it runny. Then you might as well add more water in the grinder to get a smooth paste in the first place. What difference does it make? I would understand the need for a perfect consistency if you were going to fry it first. However, this honestly makes no sense to me. Please would you explain.

I cooked this dish with sea bass and mackerel few times following your recipe. It was absolutely gorgeous. I did the tempering first and cooked the masala in it though.

I loved that you made the fish curry using only 2.5 tablespoons of oil. Looks absolutely divine. Will definitely make my sister watch this video as she uses a ton of oil to cook. She feels that more oil means more taste.

Don’t add any water to the masala remember we want only the masala not the curry at this point. Ermm ok we can add little water to make it run. (How will the blades move ?) After 4 tries ... oh Kay!!!!! Wth! Let’s add some more water F*** now can’t get the masala out of the blender.. Okay so let’s add the whole bottle of water. You’re adorable anyway 😂

Looking tempting 😋 First - Guntur Chilli look like normal North Indian Chilli !! It this different from other chilli !! Second - A chef used Kokum instead of tamarind !! Can i use Kokum also !!

The Guntur chilli is known for its spicy quotient. As for the souring agent, you could use kokum, although typically in Mangalore, tamarind is more widely used.

Try vegetables that will absorb the masala as they cook. Ladies finger, drumsticks, raw banana, cauliflower, etc.

why does the masala have to be thick if the next step is adding water. i would understand if one had to fry the masala or something first, but seems counterintuitive to struggle to get the masala to 'hold' on the spoon then add water straight to it in the pot.. what did i miss here ? Anyhow you added water to that masala afterwards so why not add enough water to the blender jar earlier so that without wanting time you can do that grinding job faster??

Cooked this curry and am happy to report it turned out amazing. Had some extra masala left so put it aside and used it to coat the inside of a dosa the way they do it in delhi to make a Mysore masala dosa...needless to say that too turned out amazing

Amazing... Especially the vagar part in coconut oil... With onions full brown and kadipatta crisp-that is the turning point

Hey. Thanks for recipe.. for some reason my gravy turned really strong with onions and at end product I have strong mustard flavour (,which was was more shorshe mache than manglorean ) wonder what I got wrong. Irrespective it was delicious .
