Sheer Khurma
After years of making sheer khurma, I have found the perfect proportions for this recipe.
Sheer in Persian means milk and Khurma means dates.
It is one of the most significant desserts of Eid ul-Fitr.
Ingredients
3 liter | whole milk
150 gm | vermicelli (sawaiyan)
14 oz | sweetened condensed milk
100gm | unsalted butter (1/2 cup)
3 | cardamom
5 | dry dates
½ cup | almonds
Method
Fry the vermicelli in butter.
This adds a lot of flavor.
Also add the crushed cardamom.
Now pour in the milk, bring to boil, and add the sliced dried dates.
Reduce the heat to medium low and let it simmer for 45 minutes to 1 hour.
Keep stirring and scraping the bottom of pan every 15 minutes.
Add the sweetened condensed milk.
Mix well, sheer khurma is ready.
It can be served hot or cold.
Garnish with peeled chopped almonds and diced dried dates.
