OPEN for ingredients! We all have that can of sardines knocking around the back your pantry. Make Sambal Sardines! This Malay stir fry is an ultra quick spicy dish that takes just 10 MINUTES to make.
It's one of my go-to busy weekday dishes but is also so satisfying and so good served with rice, or some bread on the side. Imagine bread sopping up all that sauce. Yum.

Ingredients:
- 425g or 1 large Canned Sardines in Tomato Sauce
- 50g or 2 tbsps Dried Chilli Paste
- 1 Onion, sliced
- 2 tsps Ginger, minced
- 2 tsps Garlic, minced
- 1 tsp Belachan or Fermented Dried Shrimp Paste
- 1/2 cup Water
- 1/2 tsp Tamarind paste (optional)
- 1 tsp Salt, or to taste
- 2 tsps Sugar, or to taste

We used to make sardine in tomato sauce sandwiches. just some hearty bread a little mayo and bam instant deliciousness.

OHHH i always make extra of this, so I can make sambal sardine sandwiches the next day. i mash the sardines first and layer it on with the sambal sauce, lots of CHEEESEEE and omelette if i can be bothered, toast till the cheese melts and stick everything together... it's my perfect sandwich

Greenhorn armchair cook here. Query, any reason why not to saute the onion & ginger, followed by the garlic prior to slapping on the sambal paste? The way it's done in the video, is this a matter of technique? Thanks, and waiting for your response (!)

greenhorn armchair HHAHAHHAHA. No reason other than pure convenience. you can slap these ingredients in any order and it will (in my opinion) come out the same. in fact, the "correct" way aka my mom's way is to blend onion+ginger+garlic+sambal+belachan together to a paste, and THEN saute the lot.

If you don't toast your belachan first, you can fry it first in the oil before adding the other ingredients-I promise that it makes a difference! Naik bau...
