Making Fresh Mozzarella Cheese from our Raw Milk

Our dairy cow, June, produces more milk than our family of 9 can drink. One of my favorite ways to use it all up is with homemade mozzarella cheese. It takes 30 minutes and is very easy for beginners. I like to make a protein rich soup with the resulting whey. Though you can make the cheese with whole milk, I prefer to first take the cream off and make grass-fed raw butter!
Here is the recipe I used
1 1/2 teaspoons citric acid dissolved in a little water
1/4 teaspoon animal rennet dissolved in a little water
1 gallon milk
1. Add the citric acid/water mixture to a large pot. Add the milk to the pot. Heat to 100 degrees.
2. Remove from the heat.
3. Add the animal rennet/water mixture. Incorporate throughout, making sure to get it all the way to the bottom of the pot but not agitating it too much.
4. Still the milk, and add a lid. Allow it to sit for ten minutes.
5. Cut the curds.
6. Strain off the whey.
7. Press out any excess whey.
8. Add the cheese back to hot water and stretch it. (You could also heat it up in a microwave.)
9. Stretch it a few more times and add salt to taste.

You can use that whey to make ricotta. Ricotta is made after mozzarella and it is the BEST ricotta you will ever eat.

True! Didn't t think about it being the "quick" mozzarella and not the traditional recipe. Milk can also be used to make quick ricotta using apple cider vinegar too. Not as creamy, but still delicious.

I tried the recipe and I love that the cheese came out! The only thing is my cheese wouldn't stretch, it would break but honestly it still made great cheese! I put it in the freezer to get it a bit more firm and shredded it!

I don't have any animals to feed my whey, so I freeze it and use it to make pancakes or I add it in to my smoothies instead of ice as an added protein boost! Love your ideas ❤️

let the cooled whey sit covered for 24 hours (so the cultures will grow) then cook it until 100 degrees , let cool and strain, .... Ricotta Cheese

The age of the milk makes a big difference. Especially for mozzarella you need fresh milk.

I only use rennet. According to recipes on New England Cheese company raw milk doesn't require citric acid. I've done it both ways and was satisfied with the cheese.

You could add the whey to smoothies, pancakes etc. It is very good. You can actually buy fruit-whey drink in the freezer section here in Germany (of course with a lot of sugar, when you buy it). But you could make something like that on your own and more healthy. It is really refreshing.

Thank you for sharing your knowledge and experience with us, I have so much to learn. Dehydration of eggs, separating yolks from whites. I just made chicken flour using my oven lowest temp, would love to have a dehydrator. I have water glassed eggs and need to do another batch.

My guess is Pickled eggs!!!! My husband loves them! His favorite is dill pickled eggs! And so super easy to make and great protein and a quick and easy snack! Use the leftover brine to pickle onions. So good on sandwiches

An easy way to remove the cream from the top of the milk is to use a turkey baster. We did that for years to we got a cream separator to remove all of the cream from our milk. We made butter, ice cream, cheese, yogurt with our milk and cream. Plus if you get a pig or two, you can give them the extra milk that you are unable to drink. They love milk as do chickens.

We are freezedrying our eggs. I've scambled a ton and freeze-dried those, but mainly I am just breaking them on the trays, I can get about 22 eggs per tray, and freeze drying them and putting them in mylar bags. I do think I want to try putting some raw in ice cube trays and then putting those in baggies and using them as I need them...but I am focusing on getting as much in my home shelf stable as I can. This freeze dryer, although they are costly, was worth every penny bc it is allowing me to shelf stable things I couldn't have otherwise. ~Kelly

I make Mozzarella once a week. Using 2 gallons, 2 tsp citric acid in 1/4 cup.water, mixed in milk. Bring to 100° then add 1/2 tsp rennet in 1/4 cup water. Stir, cover, let sit 10 minutes. Then cut the curds, bring to 110° drain. Salt it, have a pot of water at 170° and dip into the water, wearing rubber kitchen gloves I work it until smooth (in 3 separate balls) put in a bowl, cover and into the fridge it goes. Then take out the next day and grate it, bag it, and freeze.

It’s illegal for my state too, but you can look into cow shares and see if there are any close to you! If you own a portion of the cow you can get the milk from them. It’s not very expensive either:)

I totally could have used your video instructions last week when I attempted making mozzarella for the first time. None of the instructions I read mentioned straining off the cream from the raw milk (and I didn't even think about it).....so I think I ended up making cheese mostly from the cream since my whey ended up REALLY milky looking (it looked as opaque as store-bought 2% milk.) With the leftover whey I made Mysost/Gjetost/Brunost--a Norwegian brown cheese--which is actually quite tasty on toast or crackers.

Eggs pickled in the shell with dill, bay leaf and pink pepper corns. The hard outer shell dissolves and the egg takes on a beautiful marble effect and are amazing in salads, sandwiches and picnics Can last in the fridge for four months and

I use up extra whey in my sourdough! Replace 1:1 instead of water. Works like a charm! (I wouldn't recommend feeding with it, though :)

Another couple of ideas to use up your milk is cream cheese, sour cream, and sweetened condensed milk. Not sure how long they stay good once made but at least you could probably can the sweetened condensed milk. And that’s a great pantry staple to have on hand!

I believe the problem with the first pot of mozzarella was that you mixed the rennet way before you were going to add it. The key is to mix it up right when you are about to pour it in to the milk.

My guess is that you’ll be making and drying pasta from all those eggs. I’ve been wanting to make pasta myself, but my egg production just started to decline because of this 100 degree plus weather.

Thanks so much for the wonderful video! So informative and inspirational at the same time! I have a question for all you cheese-making pros out there: I made mozzarella recently, and it had a pukey flavor to it, so strong, I had to throw it out. I sniffed the milk beforehand, and it smelled fresh, so I don’t think the milk was bad. I used raw milk from a local farmer. This is the first time I’d tasted raw milk, so maybe that’s the way it’s supposed to taste and I’m not used to it? Also, I used vegetable rennet, not animal rennet, because that’s what I had access to. Could that have been the culprit? I strangely can’t find any info online about puke-y tasting homemade mozzarella. Interestingly, my one year old really loved the ricotta I made from the whey, but it also had a flavor reminiscent of vomit. Anyone here have any insight? Thanks!

My curd kept doing the same thing, until I reduced the amount of citric acid I put in the milk. Since doing that, knock on wood, my curds have set up nicely.
