Making jalapeno pickled eggs, step by step

If you've never made pickled eggs before, this video gives a step by step how to make pickled eggs, from your raw ingredients all the way to prepping a refrigerator-ready jar of jalapeno pickled eggs.
You start by hard boiling the eggs. My recipe calls for 11 eggs, because that's the number of eggs I think fit the best in a quart sized jar, but really, you can do any number of eggs or any size jar.
This recipe uses salt, white distilled vinegar, jalapenos (in their juice), pickling spice, and obviously eggs.

what a fantastic video! i loooove pickled eggs with jalapenos, but i've never made it myself. i'm going to try this recipe soon. also, you are very blessed to have backyard chickens!

So glad you shared this recipe, thanks! Also, the great tips with the fresh eggs and baking soda, thanks big-time for that and how you cracked the shells! I to raise my own chickens and I can certainly relate to the issue with fresh eggs and how hard it is to peel them. I love a good spicy pickled egg and I usually always have some here. I'm going to make this recipe today, have lots of eggs that I need to do something with, and i also have tons of Jalapenos I canned last year that I will also need to use. I’ve been making pickled eggs for awhile now and have settled on my recipe as follows: 2 dozen medium eggs to make 1/2 gallon. 2 cups vinegar w 1/4 cup sea or kosher salt. 2 Tbsp each black peppercorns and red pepper flakes. 2 slices onion quartered. 2 garlic cloves quartered. 3 jalapeños and 4 Serrano’s cut off stems and halved. I have tried habaneros but don’t like the flavor. This recipe works. Give them 2 weeks to cure. Really good! I don’t use pickling spice because of the clove flavor. The baking soda and jar shake peeling method really does work with an ice bath. The rest of the video methods work also. Enjoy!

Grand Dad taught me this 55 years ago and he raised Chickens also --- when you collect them let them sit in a bowl or whatever for 3 days or so... then boil them as you did and cool them like you did.. 99 percent of the time they Peel nice and easy -- most of mine the Shells slides off just like yours did. Running under warm water helps loosen the Membrane and they seem to peel more easy also.......... Thanks for the Recipe - its next on my list. :)

I just made these. I also had some spicy sausage that I bought by accident (I can’t tolerate real spicy) so I made a jar of pickled eggs with jalapeños, onions, garlic and spicy sausages for my neighbors who love spicy. I sent a loaf of my homemade bread with it, and they loved it and actually offered to pay for more. Of course I’ll make them more, but never charge them. I love when someone is happy with my canning. I have an abundance of eggs from my chickens, and the pickling possibilities are endless. TY! Btw, I simmer distilled water, vinegar, sugar, salt and spices for a couple minutes before pouring it over the eggs. It makes for depth of flavor by releasing the oils in the spices for pickling. I leave on my kitchen counter for a few days, then refrigerate for at least two weeks...and wow. Have you ever tried to make your own pickled jalapeños? New subscriber!

Great! Let me know how it works for you. Baking soda in the water, immediately put them in an ice bath, then peel using the jar technique. Works every time for my fresh eggs.

Start with eggs in cold water, bring to a rolling boil, boil for 3 minutes, take off heat and put on the side, cover with a lid for 10 minutes. Now take the eggs and dump the Hot water out, run cold water on them, now you can add your ice. They will peel very easy this way. Some times after you crack them, run some water on them as you peel them. Try it. Some people add salt to the water, some add vinegar to the water, in case one breaks open when cooking. I boil all of the spices along with the vinegar, pickling spice ( no salt with iodine), onions, jalapeno and maybe some pepper corns. Bring the seasoning to a boil and pour it over the eggs, just to be safe. You can also use a tooth pick to make a small hole in the end of each egg. When cool put in the Frig. and wait about a week to in joy. I enjoyed your video. Thanks !

Great recipe I love pickled eggs very. I make them all the time. I like to peel my eggs when they're under the water p e e l them under the water in the bowl. Shells slide right off. I've been doing that for 50 years LOL. Thanks for the recipe I'm going to try them with the jalapenos

Peeling eggs in a bowl of water helps too. The water keeps the shells from sticking to the egg and the shells come off easily ^_^ Good trick for if you don't have baking soda handy

I pickle my eggs in a half vinegar - half water solution. Just plane vinegar seems like too much acid to me... But I Iove the idea to put pickled jalapenos in it! I will definitely try that! 😊 Greetings from Germany!

My secret for easy peeling fresh eggs, is to boil as normal, but don't take them out of the water until it has cooled to room temp. Works every time.

Thank you for your video! I stopped using the baking soda method for boiling eggs because it's messy. Kept turning my stove top white... haha Try this method... put your eggs out on the counter and let them warm up to room temp. or near room temp. Then use a spoon to slip them into a pot of already boiling water. Boil for 11 minutes after they come back to a boil. The shells will come off like tissue paper, with No White Mess!!! :-)

Also, layer everything so to distribute flavors evenly. A few eggs, some peppers, onions, eggs, add more peppers, some onions, etc..

I can't buy pickled eggs where I live, and I always assumed that pickling was a somewhat expensive hobby that took a really long time. This changed my mind. Guess I'm going to give your recipe a try then. Thanks :) Now to find out where the hell to buy distilled vinegar in Australia...

One week isn't enough time. Eggs have a hard time absorbing. I would say 2 weeks before eating them at the earliest, a month would be better. They say eggs should be eaten within 3 to 4 months so plenty of time to enjoy them after a month of them sitting in the brine.

You're very welcome! Last time I used 3 tablespoons of jalapenos and that had a very mild flavor. You could try 3 tablespoons first, then add more if your family would enjoy it. :)

I made a half size batch to try the recipe, and used 2Tbs of jalapeno (we like it hot here 😉). After a week, I would call them mild. I'll do another half batch with more jalapenos, but as written, calling them mild would be putting it mildly.

Tip: I make up quite a bit of extra pickeling solution and keep it for next time to make pickeling quick and easy. Just mix your solution and spices and store in fridge in a pitcher or freezer. :) cuts your time way down for next time or two-year and you can use the solution for doing veggie mixes too.

So if you look at 18th century cookbooks the recipe that you just used would sit out on the counter because obviously they didn’t have refrigeration and nobody would get sick. When you use straight vinegar without adding extra water it’s perfectly safe as long as the eggs are completely covered

Vinegar in water helps to. Lil tip even for day old eggs or month old eggs when you put in cold water after cooked give each egg a couple cracking taps on each end or middle and let soak. The water soaks in under shell and they peel easy and quick.

I make these also but I don't use any salt I don't need any pickling spice I put the eggs in the jar with some of the size jalapenos it's like a quarter of the jar I fill up with vinegar the best I fill up with jalapeno juice you're going to have to clean a used for jalapenos after you bring the juice out but this way you use the salt but not using any you don't need pickles tonight to put these into refrigerator for one week and they start getting the flavor to use it for the egg after two weeks it takes almost 50 and they are the most flavorful harlequin cake you'll ever have

easy. You can make refrigerator pickles with jalapenos, cukes, okra, green tomatoes, and more. I like them better than most canned pickled things because they stay crunchy, even the okra. THanks for the recipe.

Nice concise video - gonna try it soon. Similar recipes call for bringing the liquid mixture to a boil & pouring over the eggs in their jar. Do you know if that strengthens the eggs' flavor or it isn't really necessary?

If you load like overload the boiled eggs with ice. Heaping ice. Eggs will peel perfectly. I use fresh eggs all the time and this works perfect.

I made a twist I usually add more salt but to that an equal amount of sugar and that will take some of the vinegar taste off if you don't like vinegar taste that much.

Isnt the straight vinegar too strong? Wouldnt it taste better to use a bit of water in the recipe? Ive made puckled eggs using 2 parts vinegar to 1 part water am i missing out by using water?
