Masaledar Chicken Pulao is often prepared for special occasions and family gatherings. Ingredients
1½ Tbsp Ghee
1 Tsp Cumin Seeds
2 Bay Leaves
1 Tsp Black Pepper Corn
4-5 Clove
1 Inch Cinnamon Stick
2 Black Cardamom
4 Green Cardamom
2 Onion sliced
800 Gram Chicken with Bones
Salt to Taste
1½ Tsp Coriander Powder
½ Tsp Red Chilli Powder
1 Tsp Garam Masala
½ Tsp Turmeric Powder
1 Inch Ginger juliennes
3-4 Green Chilli slit
1 Tbsp Ginger Garlic Paste
Water as Required
2 Cup Parliament Daily Delight Basmati Rice soaked
Mint Leaves for Garnish
Fresh Coriander chopped for Garnish
Method
1. Place kadai on medium flame and heat ghee. Add cumin seeds, bay leaves, black pepper corn, clove, cinnamon stick, black cardamom and green cardamom. Sauté for a few seconds until they release their aroma.
2. Add sliced onions and sauté for 2 minutes.
3. Add curry cut chicken, salt, coriander powder, red chilli powder, garam masala, turmeric powder, ginger juliennes, green chilli slit and ginger garlic paste sauté for 3-4 minutes in high flame.
4. Sauté for another 2 minutes until the raw smell of ginger disappears.
5. Add about cup of water to the pressure cooker and mix well.
6. Now add soaked Parliament Daily Delight Basmati Rice. Stir gently to mix the rice with the chicken and spices.
7. Close the pressure cooker lid and cook on medium heat until the four whistle.
8. Turn off the heat and let the pressure release naturally.
9. Once the pressure has released, open the lid and gently fluff the rice with a serving spoon and side out in plate.
10. Garnish with mint leaves and freshly chopped coriander leaves.
11. Serve the masala chicken pulao hot with raita, salad, or a side of your choice.
