The spoon bill has about the third best egg row in the world for caviar. Oklahoma had a keep and share program for the eggs at one time. The profits on the caviar are pretty good.

Out here on the left coast, I used to go out on the San Francisco Bay and fish for sturgeon. To cook them I would marinate them in lime juice, olive oil, fresh ground pepper and garlic salt. I would keep the fish in the fridge from 1 hour to over night and grill it. It tasted great. My biggest Sturgeon was around 70 inches and calculated to be a little over 120 lbs. I turned her loose since she was over the maximum allowable size, and those fish are the breeders and my family and I “weren’t missing “ any meals.🤣🤣
