Welcome to Meal Prep 101! Meal prep can be an intimidating subject, but have no fear! In this video, I show you how to meal prep for beginners, how to meal prep for weight loss, how to meal prep for muscle gain, and I share one of my favorite healthy meal prep recipes! This meal prep recipe makes 6 full meals, which is enough healthy meal prep for a week, and it’s super delicious and versatile.

✨ CROCK POT SALSA CHICKEN RECIPE ✨
Ingredients :
6 Boneless Skinless Chicken Thighs (695 grams)
2 jars salsa, separated (906 grams)
1 small yellow onion (144 grams)
1 medium bell pepper (128 grams)
2 cans black beans, drained (448 grams)
½ package frozen fire roasted corn (225 grams)
4 cloves crushed garlic (16 grams)
Instructions :
Trim excess fat from chicken thighs, and place in crock pot with one jar of salsa. Cover and cook on high for 6 hours.
When 2 hours remain on cooking time, add chopped onion, chopped bell pepper, garlic, corn, and black beans to crock pot. Stir to combine, cover with second jar of salsa, and cook for remaining 2 hours.
✨ CILANTRO LIME RICE ✨
Ingredients :
2 cups basmati rice (365 grams)
8 cups of water (a big pot full, but it doesn’t really matter how much water is in there, as long as it’s a ton)
2 small bay leaves
¼ cup cilantro
Juice from 1 lime
Salt to taste
Instructions :
Boil large pot of water with two bay leaves, and add rice. Cook for 12 minutes.
Drain rice in mesh strainer and rinse under hot water to remove excess starch. Put back in pot and mix in cilantro, lime juice (careful! Taste a little, add a little, until you’re happy with the taste. I used ⅔ of the juice from one lime) and a pinch of salt.
Stir to combine, and enjoy with salsa chicken.

I love that your meals aren't boring. I feel like there are so many meal prep videos out there and they are never appealing or are bland. Also, I was looking for more meal prep videos from you and I'm sad that you don't more. With that being said, make more pls! :)

I do a simple chicken bowl. Baked chicken with lemon pepper in the oven. Cilantro lime rice. Lettuce, black beans and corn. And the day I eat it I put a buffalo ranch on it to dress it a little. It's really yummy!

Just came across your channel via the beginner runner video, it's amazing and you deserve more subscribers! Great advice when it comes to choosing the right meal to meal-prep. I'm usually drowning in potential recipes, but I have a very clear idea of what the perfect "leftover" meal would be that I could easily eat...well, all the time! Keep up the great work :)

This is a great idea for having meals on hand. I'm single, older (retired) and find it so hard to cook for one. The idea of having meals in the freezer is so much better than having a bag of popcorn. (which I do quite often). I like to make a pot of chili and freeze it in individual serving containers. I'm looking forward to getting more recipes that freeze well. Good job on the vlog.

Great job, Caty. Meal prep is so easy and much better than grabbing something so unhealthy just to be quick. So much food in here with so little calories! Been meal prepping and eating healthier for about 4 months-ish. I followed River down that road. I must say, it's the best thing I've done for myself. Super great info. Thank you!!

Love this I want to try the recipe, I have a hard time meal prepping cause I can only eat left over sometime depending on what it is and if then it's hard to eat it more then 2 times in a week! But cause my celiacs I meal prep breakfast that I have no problem doing, and smoothies!

I will give this a try!!! I like to double healthy soup or chili recipes and load up on the veggies and chia seeds, plus my kids will eat them and they freeze wonderfully! White chicken chili is a great choice, and our favorite.

I really need to do this. I've made salsa chicken before for quesadillas, tacos, taco salad etc but never over rice and I've never added corn, beans and onion too it. I'll have to do this!

I cannot meal prep because i do not like left overs. I wish i wasn't so picky sometimes. For work i always take Sandwiches or yogurt with Granola. I don't remember the video but you made some peanut chicken that looked AMAZING and would love the recipe.

If you don't want to do rice, or want to change it up just keep the salsa chicken by itself and put it in tortillas somedays, rice some other days, on a lettuce taco salad other days. :)

Great video! A few questions: Does the food lose some taste? Is it safe to do this with meat/fish/rice- how do you reheat everything? Are there any foods that once cooked don't store well in the freezer? Thanks! x

Hey Petra! Great questions! Unfortunately, for most of your questions, the answers are all kind of "maybe" and "it depends". I've never personally experienced meal prep food "losing taste" from being stored (in fact, there are some food that I find get _better_ after cooling and then reheating, such as soups or chilis, which tend to _gain_ more flavor the longer it sits prior to eating) but I think it's definitely possible for some foods tastes to change. I find that chicken can be kind of finicky, for example. I'm fairly sensitive to the taste of chicken, particularly chicken breast, and if I make meal prep with chicken breast, I generally only leave a meal or two in the fridge, and the rest in the freezer. I find that meals that are frozen tend to keep their taste more consistently than meals left in the fridge for more than a day or two. It's definitely safe to meal prep meat/fish/rice, assuming that everything has been heated to a safe temperature prior to eating, just like any other kind of meal. I personally don't own a microwave, so I tend to heat everything back up on the stove top, but you can microwave your meals too. Foods that don't store well in the freezer depend on what kind of food you lie and don't like, honestly! So for me, I'm personally not a huge fan of the taste of previously-frozen eggs. Lots of people meal prep egg muffins or mini quiches for breakfasts during the week, and end up freezing them to keep them better longer, but for me, I just don't like the taste of eggs once they've been frozen. So I tend to not meal prep egg-y things, or at least store them in the freezer.

It depends on how much you cook, and what the meal is. In this case, it should keep in the fridge for a few days. If you're planning on eating it more than 3-4 days out, I would freeze it.

When you meal prep it is better to do everything separated and the mix different things so you don't eat the same food the entire week.Like cooking your protein,your sides and your veggies and the do different combinations.

Hey! I have a feeling you can follow this recipe for basic shredded chicken, and it should turn out very similarly! www.thereciperebel.com/instant-pot-shredded-chicken/ And instead of separating the ingredients, just throw everything into the instant pot all together. Depending on how chunky your salsa is, you may need to thin it out with a bit of extra liquid (either water or chicken broth) so you don't get the burn error.

Loved this video! Thanks for sharing! I am new to meal prepping and have a real question for you. Why go through the trouble of being SO EXACT weighing grams (which is pretty precise) if when you are putting the meals together you are only eye balling portions? Each container won't be the same in macros? Seems to me that, that defeats the whole purpose of weighing grams. Thanks in advance for answering. BTW I just subscribed to you. Thanks again!

Such a good question! So, I like to go through the trouble of weighing everything by grams, because then I know 100% what the total macronutrient and caloric breakdown of the entire batch meal is. Sure, eyeballing portions when you actually divvy the food up alters the caloric and macro breakdown of that _particular meal,_ but that simply means that one meal might have more, and one might have less, but they will still add up to the total at the end. For example, lets say an entire batch meal has 5000 calories, and I split that into 3 different meals. Each meal should have _about_ 1666 calories, if it's evenly distributed. But, let's say I'm planning to exericse particularly hard one day, and I want a slightly larger meal later in the week or something. When I weigh out the big batch meal, I know that the total of all the food is 5000 calories, but I could split the meals so that there's one big meal after my workout. Two meals would therefore have less food (let's say 1300 calories, roughly), leaving one big meal with about 2400 calories. I'm still getting the same total calories after those meals, but it's split in a way that might satiate me better. :)

It really depends! Instead of spending a ton of time cooking throughout the week, you're basically eliminating it and doing it all at once, which is really convenient if you happen to be busy or something.

Ej Nappe I prep break lunch and snacks for 3 days and it usually takes me about 2 hours. I take one day to prep all my veggies by chopping or shredding them and cooking my meat. I then make a few meals from that prep, same day. then 3 days later I just use the veggies I cut up and the rest of my meat (or cook more) and make more meals!

If I start with frozen chicken can I still freeze some of the meals or do I have to use fresh chicken?

I wouldn't recommend throwing frozen chicken in a crock pot, mainly because there's no guarantee it'll get up to the proper, safe, heated internal temperature from frozen. What I would suggest is thawing the chicken, and then throwing the thawed chicken in the crock pot. But from there, yes, after it's been cooked, it's still good to freeze the meals. :)

Beachangel1221 I made this recipe with frozen chicken and it turned out great! It was still reallyyyyy hot after just the first cooking portion time. I didn't do the 2nd cooking part she mentioned if that makes sense. But my crock pot is older and doesn't have a temp setting, just hi and lo.

I used frozen chicken too and the meal turned out fine. I think I worded my question wrong though. I was worried that if I used frozen chicken I wouldn't be able to safely freeze the leftovers. I did freeze them, I haven't eaten them yet so hopefully it's safe. I just don't know if you can freeze the chicken 2 times.

Hey Aldo! I'm not super familiar with the Insanity recipes or meal plans. You might have to add up all the calories/fats/proteins/carbs in the Insanity plans, and then compare to this one. If it's similar, you could substitute it. If not, I wouldn't suggest it.

Seriously, thank you SO much! I truly appreciate it. I'll definitely be looking for more music along these lines as well. I want a healthy mix of music. Some more upbeat, some with higher intensity, but also some that are a bit more mellow and I think you're right, something more mellow would have fit the mood a bit better. Aneva Fi It was necessary, because I am sure she cares about what she looks like and instead of like most people, who don't tell others if someone has a piece of food between their teeth (maybe even lipstick on them)or they accidently wore a black skirt, with a dark navy suit jacket, I'm one of those friends that don't lie to you and will tell you of something doesn't look right. I would want someone to do the same for me. Now you know why it was necessary (to me atleast) to tell her the scarf was a bad idea. Have a nice day!

You had me on this recipe, until you said cilantro lime rice.... I HATE that shit, (cilantro...yuck!) and it seems everyone is obsessed with this shit in their recipes!! YUCK!!! Sorry..... but, can't you offer us good recipes without that horrible stuff??!! please?
