Hi Caroline! Thank you for this great video! It’s easy to see how passionate you are about food and healthy eating and I find your recipes and perspective so unique! I would LOVE to see more of your fish recipes because I love fish and I am constantly looking for ways to incorporate different types of fish into my diet and new ways to make it! I completely agree that most fish recipes out there are focused on salmon, tuna, whitefish, and shrimp and would love to see your spin on other kinds of fish like halibut, swordfish, etc. Thanks again for such a great video!

I love feta. I eat it by itself. That and goat cheese. My two favorites. So delicious. I’m not vegetarian but I love veges. Thanks for the recipes because my mind goes blank when I try to think of cooking Mediterranean. I could live off hummus.

Thank you so much for the fish recipe! I have been, over the past six months, moving toward the Mediterranean diet. My plan for this year is to increase my fish intake so that I’m eating fish at least three dinners out of the week. Sardines are something I want to add to my diet because they are so healthful. Can’t wait to try these cakes. Please more fish knowledge and recipes.

My family and I love salmon cakes and you’ve convinced me to try the sardine cakes. I’ve only ever had sardines once a very long time ago but I’m ready to try again.
Fish cakes were a huge hit. Followed recipe exactly but I love that you suggest substitutions so I can use what I have on hand. Also thanks for the links to printable recipes, great that they print on one page. So many online recipes print on multiple pages (even printable versions).

My husband and I made the spanakopita tonight. It turned out great! My hubby did the prep, and we had it with fattoush. Just a comment: He got frustrated with the recipe bc there was no unit of measure for the Parmesan or the feta, but he figured cups for the Parmesan and ounces for the feta. He also wasn’t sure when to combine the spinach with the feta/herb mixture, but we figured it out. He’s a scientist, so these things matter to him.
I’m so sorry my directions weren’t super precise, I need to work way harder on that. Unfortunately I explain much better by talking than writing but from now I’ll try my best to be as direct as possible and apologize for his frustration!! Thank you so much for trying the recipe 🙏🏼 I appreciate it!

While I am a big vegetable eater, I don’t seem to eat a lot of food when I’m starting to count calories! And after recent medical tests, I need to up my protein and my calcium, so I’ve looked to go toward the Mediterranean diet to be healthier. After watching dozens and dozens of videos, I was really confused on how I could eat all this food and how do I get my protein up and my calcium up! Last couple days I’ve been watching your videos and I really enjoyed them. As a single person I do freeze a lot of foods, but it would be really helpful when you’re making dishes to do you let us know how long it can last in the refrigerator or freezer. I’m interested in the spanakopita (I think I spelled that right). Can you freeze that and if not, how long would it last in the refrigerator? And just a note I use canned fish all the time! Just find high-quality canned fish! Glad to see somebody using them in recipes!
I am SO delighted to hear that you’ve found my video helpful Vicky!! So many of my recipes are freezable! I think I talked about it in the following video, I can’t quite remember but for the spanakopita all you need to do is cut it into desired portions then freeze them individually then when you’re craving it just toast it up in the oven at 300 F for 20 or so minutes or until the center is warm. You may need to lower the oven even more because you don’t want it to burn as it’s reheating. I recommend the oven though because in the microwave the texture would totally change
Order an apron! Maybe one with your name \ logo or something. I cross mine in the back then tie it in the front. Has two pockets as well. I love them !!

Question- I got a cast-iron skillet for Christmas and I’ve never had one before. How do I “ season “ it 🤷🏻♀️?? Anyway 2023 is going to be an awesome year! Last night we sat by the fire and tossed in things we were leaving behind and not taking it into 2023 ( just wrote it down and tossed it into the fire) and replaced it w things we are going to manifest in the new year. I hadn’t done that before but felt like a fresh start was in order 😅 Don’t forget to speak positivity over yourself.. positive affirmations etc. Be kind to yourself ❤I can’t wait to see what God has in store for u this year!!!!😘
Thank you so much for the kind and encouraging words!!! 🤗🥰 I know it’s time consuming but i think you’d love the spanakopita! 🤤😋 For seasoning a cast iron i’m pretty sure you put it over the stove a take and damp towel with oil and coat the pan then bake off the oil in the oven! I’m no pro so you might want to research but that’s what i did with mine! I love the throwing things in the fire concept…letting go is absolutely CRUCIAL and I’m still trying my best to learn how too more often!😬 Be so kind to yourself as well, you are an amazing human who deserves to know how loved and special you are!!
