Ingredients:
6-8 Ears of Corn
1 ½ cups mayonnaise
1 cup sour cream
2 tsp lime juice
2 tsp chili powder
2 cups crumbled Cotija Cheese
Directions: Husk the corn, keeping it attached at the base and remove the silk. Spray with duck fat, or any sort of cooking spray. Place on grill for 30-40 minutes at 400 degrees. While corn is on the grill, mix the mayonnaise, sour cream, lime juice, and chili powder. Spread the mixture on warm corn and sprinkle with cotija cheese. For added flavor, lightly sprinkle tajin on top of the cheese.
