Recipe is for 5 LB ( 2.2 KG) of (70/30%) meat:
Salt - 35 gr - 3 Tbsp - 1.5%
Sugar - 15 gr - 1 Tbsp - 0.5%
Garlic - 6 cloves - 1 Tbsp powder
Oregano - 6 gr - 2 Tbsp
Chipotle - 3 gr - 1 Tsp
Cayen - 5 gr - 1 Tbsp
Cumin - 5 gr - 2 Tsp
Ancho Chile - 28 gr - 3 Tbsp
Achiote paste - 2 Tbsp - read label on packaging
Water - 1/2 cup
