I love this recipe, the ginger with the sesame oil and soy sauce and lime adds such a great flavor to salmon. I have never actually tried it with the miso paste, but I bet it is even more delicious.
Just cooked it right now, but added a little bit chilliflakes. So delicious! :) Also added a bit of my cooking wine before and some sesame oil after cooking to the rice to give it an extra nice flavour. ^^
Instead of Mirin, I always use dry sherry. I learned that you could use it as a substitute and using sherry works out great because you can use sherry in so many other dishes. I don't think I've ever had to buy a bottle of Mirin.
I have used those ingredients with salmon before and it is delish! Mine was not as caramelized as yours and we know how much flavor caramelization creates., yum! Question : do you descale the salmon skin??
most people go in the direction of brown sugar and maple syrup with their salmon, I like this because the sweet mirin and honey is being balanced by the salty soy sauce and the acid of lemon or lime juice
