Vegan Murtabak
Serves 8
Roti:
500g all purpose flour
10g salt
18g sugar
75ml vegetable oil (refined coconut oil will give the best taste!)
75ml oatmilk
200g water
Filling:
1 tbsp oil or more for frying
1 large red onion, diced
3 cloves garlic, diced
4 tbsp curry powder
320g frozen tofu, thawed
1/2 cup textured vegetable protein (TVP), rehydrated in 1 cup of hot water
1 small potato, cubed
Salt to taste

1/2 cup or 125ml water
300g silken tofu
4 tbsp corn starch
2 tbsp nutritional yeast

Pickled Onion:
2 tbsp vinegar
1/2 a red onion, finely sliced
1 tbsp castor sugar
1 tsp salt
1/8 tsp rose water
1 drop red food colouring (optional)
