Mushroom braised chicken is a simple yet tasty dish. The umami of the mushroom, together with ginger, enhances the flavor of the chicken. I have used a whole chicken leg chopped into pieces for this recipe. Bone-in skin-on chicken leg taste the best for this dish. You can always substitute with boneless skinless chicken thigh or breast if you prefer. Chicken wings work too. Use whatever is easily available to you. You really need dried shiitake mushroom in order to get the flavor. Fresh ones does not work as well. The resulting sauce is so yummy that it seems the amount of rice is not enough. The gailan does look old after cooking but the crunch is still there. You can choose to add the veg in the last 15 mins of cooking if you like.
Remember the RICE setting for the itaki chefbox automatically adds another 10 mins at the end. So adjusting the timer to 30 mins will result in 40 mins of cook time. Do give this dish a try and I am sure you will enjoy it.

1 tsp - soy sauce
1 tsp - dark soy sauce
1/2 tsp - sugar
2 tsp - oyster sauce
1/3 cup - water
