Black pepper beef made in the itaki chefbox taste great with rice along with a side of vegetables. To be honest, the beef was a tad dry as the cut I got was too lean. Also doesn’t help that the beef was cooked along with the rice for the full 40 minutes. If you prefer more tender beef (who doesn't?), put the beef tray in 20 minutes into the cooking time. This will also result in a crunchier onion and red peppers. The black pepper sauce goes very well with white rice. If you prefer a stronger pepper taste, feel free to up the amount of black pepper. Do give this a try and enjoy!

Baking soda softens up tough meat. Just rinse it before seasoning and sauce.

Could I use chicken? I’m so glad you got this particular chef box because I have one and really want to learn how to use it.

I just got my Itaki Pro and just did this one. I ended up putting the large dish (beef/onion/capsicum) in after 20 min. as you suggested. It turned out fantastic! I used thinly sliced rib fillet though. One question - is the corn starch in there for any other reason than to thicken marinade/sauce? Asking because I have type 2 diabetes and would sooner leave it out. Great work and subscribed ❤😎🇦🇺

The cornstarch is for getting the meat a silky texture and also to thicken up the sauce a little. You can definitely leave it out. Thanks for subscribing 😊

One more question - it seems my Itaki cups are a tapered style measuring cup with 30mL being top graduation. Are your cups the same? I see yours have curved sides. And do you just fill them right to top or to top (30mL) mark to set cooking time? I’m doing the pork/apple/garlic mash recipe next! ❤

Fill to the 30ml mark. My cup has the 30ml mark right at the top.

I love your videos thank you. How would you suggest keeping liquid out of the dishes? They don’t recommend using the lids whilst cooking? I made a satay last night and there was so much liquid in the large tray (bottom compartment). I covered it with aluminium foil but it did nothing. Thank you, I am going to try this next.

Liquid will always be there due to the steaming process. Not only does the steam goes in but the juice released by the meat does not evaporate. If you covered with foil, the liquid is probably released by the meat. If possible, try to put something under the meat that soaks up liquid, like rice or glass noodles. Use less liquid in the seasoning and more powder spices. Add corn starch so that when you stir after the food is cooked, the sauce thickens. Hope that helps.

Just bought an Itaki, does it smalls while it’s cooking, just want to know if I can cook at my desk or put it in the kitchen we have at work.
@CoolCucumberCook

Mostly depends on what you are cooking but I would say there will be slight food smell especially when the food is about to be fully cooked. If you have a kitchen where you can put the itaki in to cook, I would suggest you do that. Enjoy your lunch and the envious looks from your colleagues! 😁

Yes, it smells and I only tried to steam cauliflower at my desk. 20 minutes into it and people around me started saying “smells cauliflower”. If you are in the UK, they would most likely require you to have this PAT tested (at your expense) before getting the right permissions to use in the office (we have microwave ovens in the kitchens at work). I brought mine at home after using it once.
