HOW TO COOK A PERFECT STEAK - IN THE OVEN AND PAN SEARED ON THE STOVE

Hello, In this episode I will show you step-by-step how we cook the perfect pan seared steak without using a BBQ grill or special rubs.
Here are the ingredients I use for my pan seared steaks:
1. Kosher salt
2. Black pepper
4. Olive Oil
Here is the step-by-step process I use to make my pan seared steaks just perfect:
1. I buy the steaks a couple of days before we are going to cook them.
2. I seal the steaks well and let them sit in the refrigerator for 1 to 3 days
3. I take the steaks out of the refrigerator about 30 minutes before I'm ready to cook them
4. Preheat the oven to 275 degrees Fahrenheit
5. Use the kosher salt to cover the steaks on all sides
6. Add black pepper to the steaks
7. Place the steaks in the backing dish and put the meat thermometer in one of the steaks
8. Bake until the internal temperature of the steaks reaches 127 degrees Fahrenheit (about 30-40 minutes)
9. Take the steaks out of the oven
10. Add olive oil in a large pan and set the burner to "high" to sear the steaks
11. When the oil starts to sizzle, carefully place the steaks in it
12. Sear each one of the 4 sides for about 45 seconds each (for medium rare to medium)
13.After you take the steaks out of the pan, let them rest for 10 minutes, then slice one of them to check if done to your taste.
As a side to our perfect oven baked pan seared steaks, we usually have steamed asparagus with sea salt, or steamed green beans with garlic, salt and dill (dry or fresh depending on the season).
P.S. This is always more than enough for one meal, so we hardly ever have a third option on the plate. We prefer to have an extra serving of greens, than potato or rice or corn.
*This pan seared steak recipe can be used for pork chop as well

I’m always scared to cook steak because it never turns out good, only okay. I followed this recipe and it was probably the best steak I’ve ever cooked! I went up to 135-140 for the temp and it came out a perfect Medium! I’m so grateful, thank you!

I’ve been trying to make steak for the last year a few times and they were all meah. This recipe changed my mind about steaks. Added one small thing to the recipe. After seering, while it started resting, I added some melted butter mixed with minced garlic. Thanks a lot for the recipe 🫶🏻

I'm a grill lover and always cook steak on the grill but I decided to try this recipe last night. it came out great. I have to say that the meat wasn't as tender as when made in the grill but it was a hit, the whole family loved the flavor and temperature of the meat. Thank you!

Love it! I'm a damn good steak cooker myself but I always use my grill, well, I ran out of propane and charcoal, so both grills were out of service and I wanted to try baking a steak, this was the first useful video I found, well done on the video!

i’m a vegan but i made this for my boyfriend. when i seared it i put onions and garlic in and simmered it for 10 min before i seared the steak. came out wonderful. boyfriend and his friends said it was sooo good. didn’t need steak sauce. one of the best steaks they ever had 😛

Just tried it and it was perfect. I just added a bit of garlic powder, left it in the oven about 5 more mins and seared it for 2 minutes each side because i like it a bit more crispy. Thanks!

Delicious! We followed this method tonight for Christmas dinner, and I will admit we had reservations when we first took it out of the oven, but after searing it on all sides and letting it rest... it turned out perfectly. Thank you for the video!

I tried your steps and had great results. Perfect ribeye in 30 minutes start to finish. The best! It's my go-to recipe from now on. Thanks! But I will be switching to grape seed oil next time... I got a heavy olive oil smell in the kitchen due to the high heat.

I have followed this and just thank you because it came out perfect!!! I now have steak regularly especially in the colder seasons. I just use the boil option for 2 mins towards the end for each side of the steak if I want a more well done steak . Otherwise this is great recipe. Thanks for sharing this recipe!

Did this recipe and it was a huge success. One note: i did 15 mins in the oven and 45 seconds of searing on the sides and it ended up medium as opposed to rare. But it was still super tender and delicious!

I was never good at cooking steaks. They always turned out wrong no matter what i did. I discovered the reverse sear method and will never cook a steak any other way again. It turned out perfect. Great video !!!!

Super simple recipe! We just splurged on 2 Ribeye steaks (1 1/2 inch thick, great quality for $62) and I was freaking out about cooking them. Fingers crossed this will work!

This came out an absolutely tender medium rare! I may have to experiment a bit because, by the time I let it rest 10 mins, it had cooled down more than I would like. But, still very good!

The steaks look great Sasha! A couple things I do, I season both sides of the steak and I oil the steak, not the pan. I also do everything in one pan to keep the juices and caramelized bits for sauce. Have you ever looked into Sous Vide cooking? Its suppose to be excellent for steaks.

Hi there :) After I posted the video, I realized that I have edited out the part where I flip the steaks and seasoned the other side (at least I mentioned it :). I have to try oiling the steaks vs the pan... never thought of that; thank you! I have never heard of Sous Vide... I just stop writing to look it up - this looks so familiar and I wonder if it was you that told me about it long time ago... I bookmarked it so I can read more about it. This is such a great video on how to cook a steak!However, my steak in the oven took about 15 minutes to reach 125 degrees, so I would suggest anyone trying this to check your temperature to make sure you don't overcook it, other than that the final results are fantastic !

135 degrees celcius in the over for 30 mins. To try and get an internal of 55 celcius. 50 is rare, 60 is medium, 70 is well done. Thanks 👍

just now getting to your videos , ....i got behind.....that steak looks so good that i am hungry again .....i just had home-made mac n cheese and hamburger ......but thats all right.....i used your recipe for the sweet potatoes several days ago and they were so good. i will have to write the recipe down on a card in case something happens to my computer..i thought about what to go with the sweet-taters and decided to go with cole-slaw and griddled ham.............thanks sasha ,the meal was one i will have to do frequently......

If my steak is 0.75 inches thick, and I want it cooked a perfect medium, how long should I put it in the oven for, and how long should I sear it

Hello again! So, yours is just a bit thinner than those in the video. If you have meat thermometer, cook it in the oven until the internal temperature is 128 degrees Fahrenheit. If you do not have one, cook it in the oven for 20 minutes, take it out and let it sit while heating up the oil. Then seat it on each side for 45 seconds. That should do it. After the steak has rested for 10-15 minutes, cut it just enough to see the donness right in the middle (the center). If it appears too raw for your liking, turn the burner back on and sear it for another 15 seconds on each side. It’s better to have it less done as you can always cook it a bit longer later, but you can’t uncook it if it’s overdone. It will get much easier with time as different burners and ovens work differently and stakes thickness varies. Good luck! Let me know if you have any questions 😊

I just cooked my steak like this. It turned out really good. I usually prefer bbq. But my BBQ is broken and it's winter here in northern Canada. This was at least as good as the bbq, maybe better.

This is amazing. My husband will grill steaks and they're great, but if he can't grill for whatever reason and I want a steak, I've always had to get it at a restaurant. My own attempts in the oven or on the stovetop have been lackluster at best. Raw on the inside, burned on the outside or just unappealingly mushy-brown in the oven. Waste of good meat. when I try this, i want to do medium. I think it will be easy if I just rely on the meat thermometer instead of extra time on searing. I am worried of over searing the sides to get medium.

Hello! Yes, thermometer would be best. But you can also sear the steak as shown in the video, then let it rest for 10 minuets, make a small cut in the middle and if the steak is still too rare for you, do additional 15 seconds on each side. I hope this helps. Best, Sasha

Maple Flagg Hi! No one in the family like the steaks well done, so it would be hard for me to do... One day, when I’m wealthy I could experiment with a few steaks to see if there is a way to make a steak well done and tender at the same time... I did over cooked a steak once and it wasn’t tender at all. Maybe you can try different tendering techniques... I’m sorry I’m not much help here...

Didn’t u say u would put info for those of us that don’t have the thermometer at the end of the video. Did I miss it? From what I heard you say : bake at 275 degrees F for (about) 30 min so I am going to go with that. CANT WAIT TO EAT :)

Hello! Yes, for steak that size, about 30 minutes. But just to be safe, maybe do 25 - you can always do a few extra seconds in the frying pan. Good luck and I hope you enjoy!!!

Reg SALT: I never pre-salt my steaks prior to cooking! The salt actually dries out the meat during cooking. Salt draws the juices out of the meat which will then evaporate during cooking. I always salt to taste when done.

Hello, for a standard size steak, I would say bake for about 20-25 minutes and then sear on each side for about 45 seconds to a minute at the most

@@AnOldSchoolHome So, do you flip the steak half-way or just leave it in the skillet (I would be using a skillet in the oven) without flipping. I can't do the searing as when I did the other night, it turns out the exhaust fan above the stove does not vent to the outside, so my searing of 4 minutes (2 on each side) filled the kitchen with smoke. Yeah, I left it there, and then finished in the oven, but the landlord was not happy about the smoke-filled area. So, until the spring time when I can do this outside, I figure I'll just bake my T-bones. Thank. you.

Yes, it does have to be flipped and you definitely need some sort of fan to absorb the smoke from the butter/oil

You do not have to rest steaks when using the reverse sear method she uses. Cooking them low and slow in the oven first achieves the same effect as if you rested them. I just did a reverse sear yesterday and sliced right in. So dang good and it doesn't lose any of the juices like it would if you cooked your steak on the stovetop only without resting! The other thing to know is you want thick steaks for this method. Minimum inch and a half.

Such an interesting technique, the complete reverse of what all the TV chefs do -- ie, the normal procedure is to sear then finish in the oven. But clearly it also works this way round, and for a beginner, having the timings and temperatures is excellent (would be nice to have F to C conversions if you do another video, as in Europe we use C only). Also, is that a fan oven please? (ie that affects the temperature setting)

Hello, I do like this method because it gives me the flexibility to make the fat around nice and crunchy at the very end. I’m sorry about the temperature, but these days is easy to to convert on the internet. And lastly, this is a regular oven without a fan. Thank you so much for your support!!

Great easy recipe thank you so much for the video. I will add one thing, I made a small mistake. I had three steaks two where the same thickness and the third was a bit thicker, I took the temperature on the thicker, the other two were still good but just a bit over cooked for me. Next time I will take the temperature on the thinnest of the steaks. Once again great technique

You should still take it out of the oven when the internal temperature is around 125-127 degrees Fahrenheit, but then cook it longer in the pan.

That's a beautiful steak! If you use butter or bacon grease, it's more healthy and better tasting than with olive oil :) I'm going to use this method but with butter instead of oil!

I’m guessing the 275 degrees is in Fahrenheit? I heated my oven to 275C and put the steak in... quickly realised it was too hot!

i think paprika can be considered simple as well ;) and it ads some real unique flavor that salt , pepper don't. These 3 are the most important spices in cooking anyhow

Hi Mark, I never had to do a tomahawk without a thermometer…. I have done a standard tri tip which takes between 25 and 35 minutes in the oven at 275 Fahrenheit.

I liked your recipe and video both....I m from India and in some states eating beef is prohibited due to religious reasons..tell me one thing...are beef steaks kind of raw after cooking / when served.. I mean they look fully cooked from outside but pink when you cut them...are they chewy by any chance or melt easily??

Hello Amritraj! I feel bad you came across my video... yes, I now that cow is held as a holy symbol in India... So, although the meat looks pink in the inside, it is not raw and it is not chewy at all. If you overlook it, then it becomes chewy.
