For those asking about soy beans, I get mine organic from Azure Standard. I know not everyone has access to them (especially more east coast), but for those who do it's an option. I think I get 25 pounds at a time for about $44. And thank you, Kathy, for the video!!!! (From one Kathy to another. 😉) I was just looking at my okara and thinking it looked so much like ricotta, went to search recipes to see if someone had turned okara into ricotta and here you were! Mine is uncooked because I blend soaked beans in my Vitamix and then cook the milk on the stove for making tofu but I'm totally adding this to my lasagna tonight. It should get cooked in the lasagna.
Oh wow, is that ricotta cheese ever great over macaroni! I did have to cut down the nutritional yeast amount. It was a bit overpowering. But once I did that it is beautiful. Mine is creamy because I have a very fine Okara. But add some vegetables to that and it’s a beautiful pasta dish. Thank you, Kathy for a wonderful New Year’s present!
Lactic acid gives it a stronger taste as if it were fermented and I use it in my vegan cheeses. I wouldn’t try oat milk pulp, but nut milk pulp should work.
That 'ricotta' looks amazing. And I'm betting that it has some good protein levels too. Something that I really find annoying about commercial 'cheese and dairy' products is their lack of nutrients and basically being empty calories for the most part. Except of course for the milks. So I'm a soy person too and I'm not fond of using the nut bags either, but there sure are a lot of negative reviews on the Miomat. How long have you had yours? I was almost ready to make that purchase and start making my own but that has kinda drawn me up short. Also, do you use GMO free soybeans? Where do you get yours?
