Today we're making Om Ali, which is an Egyptian bread pudding that is made with pastry. It's filled with nuts, and sultanas that give it a simple but delectable flavour. We'll be making this using store bought croissants, so it's as simple to make as it is delicious.

Ingredients (Makes 4 large portions or 1 family size serving):
450g (16 oz) Croissants or 400g Palmiers (Bakery croissants will probably be denser, so you may need more)
1L (33 fl oz) Whole Milk (High Quality, preferably jersey cow or buffalo)
250ml (8.5 fl oz) Extra thick cream (High quality, preferably jersey cow or buffalo)
75g (2.7 oz) Brown sugar + extra for dusting
75g (2.7 oz) White sugar
Toppings:
50g (1.8 oz) Hazelnuts
50g (1.8 oz) Almond flakes
50g (1.8 oz) Sultanas
25g (0.9 oz) Dessicated Coconut
You can use any nuts or other fillings you like

Directions
To prepare the croissants:
1. Using a bread knife slice the corners (ears) off of each end of your croissants
2. Slice the body of the croissant in half and then slice it into bite sized chunks
3. Line a baking sheet with grease proof paper, and place your croissant pieces on it in a single layer. Turn them so the inner part of the croissant is facing up
4. Place the sheet in the oven to bake at 180c (350f) for about 6 minutes, until all the croissant pieces have browned and dried slightly
5. Repeat until you have done all the croissants
To prepare the nuts:
1. Peel your hazelnuts and remove any of the brown skin
2. Using a knife chop the nuts into large chunks
3. Place the nuts on a baking sheet lined with grease proof paper and bake at 180c (350f) until browned
4. Remove immediately from the tray and allow to cool
To prepare the milk mixture:
1. Add the milk to a large pot on high heat
2. Add in both the brown sugar and white sugar, and stir the pot, allow to come to a boil
3. Once it boils and foams up, remove it from the heat and use immediately
To assemble the Om Ali:
1. In an oven proof baking dish, place your baked croissant pieces
2. Add any toppings you want to include over the top of the croissant pieces
3. Add enough milk so the pastry is just barely emerging from it. You can add more croissant pieces if necessary to get it to the right depth
4. Spoon over as much of the cream as you can and then top with some more brown sugar
5. Set your broiler to low and place the puddings beneath it
6. Once the cream has melted and the surface of the Om Ali has caramelized, remove it from the oven
7. Garnish with more nuts and serve once it is no longer a scalding temperature

I'm hoping to tackle feteer sometime soon, but it really needs some time to experiment. They make a similar bread in Yemen which can be cooked on a pan so I think feteer can as well!

These are my absolute favourite dessert all year around but especially in the winter months. I infuse my milk with cardamom and cinnamon because I adore those flavours and hold back the ashta to keep it less fatty because oh boy the fat content on this dish is astonishing! Love that you channel has had amazing growth. I hope you have continued success. I have been using your videos as inspiration for dinner parties. I hosted a BBQ with chicken shawarma and vegan mushroom shawarma. The flavors and side dishes were on point taking cues from your other videos. What a fabulous dessert - I’m salivating profusely. I use stale croissants for my British bread and butter pudding, but this is a whole new level 😋 I don’t think I would dare make it because I would probably scoff the lot. Best wishes to you and your wife from a Granny in Scotland 🥰

I tried Om Ali for the first time at a Mediterranean Tea/Dessert place and I have to say I really really like it. I probably like it way more than regular Bread pudding although what I had was mostly cream with bits of Croissant in it. I also tried other desserts like Baklava and Kunafa which I've already had before along with some Iraqi tea. In terms of tea/coffee culture I think I am hooked. Definitely better than going to Starbucks. Still other desserts I wanna try and their savoury pastries.

This looks amazing. I have a budget-wise question: can I use bread instead of crossaints, and peanuts instead of the other nuts you used? Pistachios, almonds and etc. are quite expensive where I live

Possibly, you should choose something with a strong structure such as a sourdough. Anything else might dissolve in the milk. You can put any nuts you want.

Slice up your bread, like Obi mentioned Sourdough. The on a low setting in the oven dry them out. They should hold and not get soggy so much.

Not really, Algerian food is more North African, it's closest to Tunisian and Moroccan cuisine.

It's usually done like this with no additional flavours, but you can add some vanillin or cardamom if you want to play around with it.

Yeah they're pretty much the same, just made from a green grape. Depending on the variety of grape they are made with, they will obviously taste different, but you can just use raisins.

It's milk from Jersey cows, and has a very creamy texture. It can always be replaced with regular milk with the addition of a little cream for the same texture

Thanks, I find I talk faster in the intro and outro, which I think comes down to being on camera. It makes it harder to remember what I'm trying to say, but I'm getting better at it. I'll try to slow down my speech a bit. There's also a function where you can play the video back at 0.75 speed which might help.
