I love how Jenna Marbles mentioned Jun's Kitchen in her new video. I had just finished watching this video and for a second I got so confused about what I was watching!

Red velvet history. If I can get it right 😛 Today's red velvet cake is just chocolate cake with a LOT of red dye. The frosting used today is a cream cheese frosting. During the depression, in the US. People didnt have much money to buy lots of ingredients. So they used vinegar in their cakes. Because the cocoa powder was different than what we use today, which is usually processed. The vinegar would react with the cocoa and turn the cake red. The addition of vinegar and buttermilk. Created a velvet like texture with the cake itself. The frosting was a flour milk base. Again, this was during the depression. People used what was already in their pantries. I have tried this frosting and its not bad. You have to make sure you cook the flour and milk long enough to remove the flour taste. I always add sugar based on my own taste buds. Most American sweets are just that to me. Sweet. Its wonderful getting the other background notes with sweet treats. In case no one knows. This frosting is made primarily on a stovetop. You treat the frosting like a sweet version of a roux! I may have missed a lot of information. But this is a general history of red velvet cake. There are also recipes for other "velvet" cakes from the same era. Cat note: my version of Poki keeps snuggling closer. He is like baby where he does not want to be touched unless its his terms. I am certainly going to look into the furnature box. That was cute. To see my furbaby that high. Should be interesting!

That cat box is amazing! You had one cat in there for like most of the video! It's nice enough that it looks okay in the house, but cheap enough to satisfy a cat, who always seem to prefer cheap garbage over the nice things we spend money on for them! I unfortunately don't have cats anymore, but I'm definitely buying one of those next time I get a cat.

The OK sign in Europe is not offensive! 4chan spread a meme that said it was a white power sign, as it sort of looks like a ‘w’ and ‘p’ when you make it. People took this seriously and it made it to mainstream media, but it has no real negative connotations! It’s actually a game in the UK to make the symbol below your waist and to try and make someone look at it, if they look they lose!

Since Jun was asking what flavor Red Velvet is, an actual homemade red velvet cake is made with cocoa, vanilla, red food coloring, and a little bit of buttermilk (and sometimes vinegar!) to give it a sort of sharp, tangy flavor as opposed to plain chocolate! (Most people I know just use a box mix instead, because it's much quicker!)

Have you guys ever tried dark chocolate covered dried blueberries? They're not really sweet but have a nice bitter taste from the dark chocolate and a tart pop from the blueberries. I also love dark chocolate, cherry, almond, and coconut clusters. I'm a dark chocolate addict but these are actually pretty healthy for you and not overwhelmingly sweet

Red velvet cake is just dutch chocolate cake with red food coloring, and yes... cream cheese frosting.

Red velvet is my favorite cake. I believe it originated in the South in the US and was originally a reaction between the ingredients and vinegar to make the color and give a slight tang combined with the cream cheese icing. Modern recipes or box mix versions have food coloring added to make it brighter and so you can actually make other colors of velvet cakes, I have seen blue and green used for variants. I would love to see Jun's version of red velvet cake from scratch. ♥️♥️♥️

Dear Rachel and Jun, Red velvet is a chocolate substitute devised in the 1900s in America when cocoa powder was scarce. You could mix the cocoa powder with with a little beet root or red food coloring, and you wouldn’t have to add as much cocoa powder that way (depends on the recipe). It became very popular during the Great Depression, especially with WWII food rationing. Bakers would add beet juice to their cakes for color and beetroot was used as filler and to retain moisture. It is one of the only depression era food inventions that not only survived until now but is somehow beloved around the world. It’s basically the deep red color trying to trick you into thinking it’s still a deep rich chocolate. It’s done better by some than others, I’ve had some pretty meh red velvet and some so amazing I could cry.
