Ingredients:
1/2 cup butter
1 white onion, diced (white or yellow, either work well)
2 cups carrots, matchsticks
3 - 6 cups broccoli florets, chopped small
3 cups chicken broth
2 cups milk (I used 2%, whole milk is also fine)
2 cups heavy cream
1/2 cup flour
1 1/2 tsp salt
1 tsp black pepper
pinch of red pepper flakes (optional)
4 cups shredded cheddar cheese (I used a medium cheddar)
Directions:
To a large soup pot on the stove over medium high heat, add the butter and melt. Once melted, add in the prepared carrots, diced onion and broccoli florets. Give the vegetables a good stir and let it cook uncovered for about 5 minutes or until softened. Time cooking will depend on the size of the vegetable pieces.
Add in the salt, pepper and red pepper flakes. Mix until incorporated. Add in the flour and mix until you no longer see anymore white particles. Let the raw flour taste cook out before adding in any liquids. This should take about 2 minutes or so.
Add in the chicken broth, milk and heavy cream. Let everything in the pot come back up to temp, stirring frequently. Once you start to see small bubbles or a light boil, add in the shredded cheese. Mix until fully melted in.
Turn down the heat and let the soup continue to cook until it thickens. 10-15 minutes. Enjoy!
