Ingredients:
4 large russet potatoes, washed and dried
4 tbsp salted butter
1/3 cup sour cream
1/3 cup whole milk
1/2 tsp salt
1/2 tsp garlic powder
1/4 tsp black pepper
1/4 tsp paprika
1/4 tsp onion powder
1 oz cream cheese
1 cup cheddar cheese, extra for sprinkling on top
3 green onions, chopped
6-8 slices of bacon, cooked and crumbled
2 tbsp chives, chopped
Directions:
Wash and dry the potatoes. Using a fork, poke a few holes into each potato. This allows any steam to escape while the potatoes bake in the oven. Drizzle vegetable oil or avocado oil over each potato. Rub the oil all over the potato. Season the outside of the potato with a sprinkling of salt and pepper or any favorite seasoning you prefer. Again, rub the seasoning all over the potatoes. The oil will help keep the seasoning stuck to the potatoes.
Into a preheated oven at 400 degrees for 1 hr. Let them rest for 10 minutes before moving on to the next step.
Once the potatoes are cool enough to touch, using a knife, cut open a section of the potato lengthwise. Pretend you're carving out the shape of a boat, if that helps. Spoon out the insides into a large bowl, being careful not to scrape the walls of the potato too thin. Repeat with the remaining potatoes.
To the bowl with the potato guts, add in the butter, milk, sour cream, salt, garlic powder, black pepper, paprika, onion powder, cream cheese, cheddar cheese, green onions, and half of the fully cooked and chopped bacon. With an electric mixer, mix until creamy. Taste test your filling and add in any extra ingredients if you so choose.
Take your potato shell and stuff each one with a generous mound of filling. Top each potato with a layer of cheese and the remaining bacon. Into a preheated oven at 350 degrees for 20-25 minutes or until the cheese is nice and melted. Top with chives and enjoy!
