In todays cook we are finally laying out one of our new family faves. Chinese pork Char Siu, AKA BBQ pork from your local Chinese fast food joint. But Better!! And homemade!

Char Siu (Hawaii’s pickle lady 100 year old recipe)
- [ ] 8-10 pound pork butt (preferably boneless)
- [ ] 2 cups sugar
- [ ] 1/4 cup Chinese wine
- [ ] 1/4 cup minced garlic
- [ ] 1 tbsp coarse salt
- [ ] 1 tbsp Chinese 5 spice
- [ ] 2 chunks red fermented bean curd (www.amazon.com...)
- [ ] 1/8 tsp red food color (about 8 drops) add on sugar not meat to make sure it doesn’t get into just one spot of meat
- [ ] Make sure to wear gloves while mixing
- [ ] Put in ziplock bag for one day. Up to five days.
- [ ] Cook at 300 degrees for 45 minutes
- [ ] Glaze and cook another 45 minutes

I think that sauce would be good as a injected then you put molasses on top and rib rub and smoke it starting at 180 go from there
