Pepper Steak with Potatoes - Escaping The Mouse - ETM-1016
5 medium red potatoes, cut into1/4-inch slices
1/2 cup water
1 pound boneless beef sirloin steak, thinly sliced
1 garlic clove, minced
2 tablespoons olive oil
1 medium green pepper, julienned
1 small onion, chopped
Pepper to taste
4 teaspoons cornstarch
1 cup beef broth
Place the potatoes and water in a microwave-safe bowl; cover and microwave on high for 5-7 minutes or until tender.
Meanwhile, in a large skillet, saute beef and garlic in oil until meat is no longer pink. Remove and keep warm; drain drippings. In the same skillet, saute green pepper and onion until crisp-tender. Return beef to the pan. Add potatoes and pepper; heat thoroughly.
In a small saucepan, combine cornstarch and broth until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Drizzle over meat mixture; toss to coat.
Yield: 6 servings.

U can add beef stock instead of broth for more flavor. Or a bouillon cube., which can be salty but the potatoes will take care of the excess salt.

Breck, That looks good! You know what I think you can do to add more flavor to it? add some Jalapenos along with the green peppers and also maybe some fresh herbs like thyme. If not thyme you can add cilantro to give it some herbage. maybe more salt too. I have grown fresh herbs in the yard and noting like fresh thyme it is amazing to any dish.

It is pretty good and there are a lot of things that could soup it up a bit. The point of the recipe book I used is to provide recipes geared towards working families. My experience is that there is no recipe that can't be improved upon, and this one is no different.
