Persian Chickpeas Cookies With Colored Icing/ Shirini Nokhodchi / شیرینی نخودچی رنگی

Ingredients:
Cookies :
Chickpea Flour : 400 Gr
Powdered Sugar : 175 Gr
Melted Butter : 175 Gr
White Flour : 100 Gr
Ground Cardamom : 1/2 Tsp
Icing Sugar :
Egg White : 2
Powdered Sugar : 140 Gr
White Flour : 1 Tsp
Cacao Powder : 1/2 tsp
Gel Food Coloring (Of Your Choosing)
pistachio slices
Sesame
Shredded Coconut
Parchment Paper
Cellophane
Instructions:
Combine the powdered sugar, cardamom and Melted Butter in bowl.
mix for 2-3 minutes until light and creamy.
Add the chickpea flour in a few steps into the bowl.
Then add white flour and continue kneading for about 10 minutes until the dough is smooth.
Spread the dough into a tray to a thickness of 3/4 inch (cover the bottom of the tray with cellophane).
Preheat oven to 160°C (320°F ) and line baking tray with parchment paper.
Pour the egg whites into the bowl.
beat egg white until stiff.
Add powdered sugar and white flour and continue beating until smooth.
Then add cocoa powder and Gel Food Coloring.
Take the dough out of the tray and divide it into equal parts.
Cover the dough with colored icing.
Sprinkle chopped pistachios ,sesame and Shredded Coconut on top of each parts.
Cut the dough into the shapes you like.
Place the cookies in the oven tray and bake for 30 minutes.
Remove cookies from oven and let it cool on tray for a few minutes.
