This is an authentic south Iranian "Hashoo" stuffed Fish. It can't get more delicious and authentic than that. The original Abadan way of making it does not require the tomato paste. Skip it! Ad the tamarind paste instead! The Hashoo needs to be fried with lots of garlic until it is almost black before you ad the tamarind. No water at the end needed.The right Hashoo is soft but not spreadable nor clumpy. You can put your fish into the oven and set the Hashoo on top. It will save some oil and gets less fatty.
