Love brats on the Pitt. I do mine only onions 1/2 the amount of beer. I let them rest off Pitt in broth once they get 150f until room temp, then grill/sear off. This helps them from bursting on the heat and IMO makes them juicer. Garnish only with mustard and/or kraut. Perfection.

That is a home run my friend. That is THE only way to cook brats! Another fabulous variation is Italian sausage! Excellent cook!

Great recipe, thanks for sharing! You need to add some of those onions and peppers to the brat, a great compliment to the mustard!

What happens if my pit boss doesn't have 325. Mine is 300 350
