Good question. I think that you should do demos of war horses. It might keep the tourists off the horses. Less likely to treat them as pets and more likely add a touch of fear. Also, add this line to the signs. Horses have an obligatory jaw. Once it closes to the point of no return it will not open until humans are bruised. Seriously. They don't kiss you, they may lick you for the salt but those nibbles turn into bites. They do it to each other when excited. Their skin is much tougher than yours. ❤
