The ironic thing is that this is still arguably one of the best recipes on Jack’s channel, simply because someone else made it and the meat is actually fully cooked.

It looks like constipation on a plate and probably tastes like a stomachache. Soggy, salty tortilla chips on bland, wet ground beef... then the milk... Jesus Christ.

@@adbreon Going in, yes, but after an HOUR in the oven it will be seriously overcooked. It will probably not be dry though with all that liquid and cheese it's swimming around in 😆

Ok, Mexican here and I have a few things to say: 1) These are not enchiladas, but it is close to an actual dish named "pastel azteca" (aztec cake). About the technique, it would be better done like a lasagna by mixing layers of full sized fried tortilla, cheese and chicken or in this case, their pork. You could also add some corn or poblano. 2)Soggy tortillas are not a big no no in actual Mexican cooking since we even have tortilla soup or soggy chilaquiles. But the way they broke them into tiny bits is wrong, you will end with lots of tiny lumps, which are bad for texture. 3) Enchiladas are already a lazy dish, I could make enchiladas with fresh salsa in half the time, effort and ingredients this thing took. 4) who the hell puts olives on their enchiladas?

I have a Puerto Rican friend who's wife makes empanadas and enchiladas with green olives with pimento(nor black) and its a family tradition for them. But unlike Jacks friends recipe its actually good food(enough that they are working towards making a food truck- and all my coworkers who are various ethnicities like them). So my guess is more European influences for this variety. *not to say Jacks friend made it well, I think like all Jack food its gross.

No hispanic woman is going to cook like this in public out of fear their mother is going to appear and beat their ass. c) No hispanic person would refer to this as "enchiladas," they'd just call it half-assed chilaquiles.

Being from Texas with many Mexican friends I feel you. That is the most horrible thing I have seen. I have to have authenticity. Can't even stand store bought tortillas.

@@ChefJamesMakinson OK, I already watched it and there's a lot of things I can say they did wrong. Here in México, there are about 10 traditional ways of making enchiladas they vary from region to region and none of them use that canned sauce, in fact I've tasted that sauce and it's nothing at all like any sauce we use to make enchiladas, we use fresh chiles or dried chiles depending on the style and we always prepare the sauce from scratch. There's a variety of enchiladas that use mole rojo or mole dulce (sweet mole) which are my favorite. There's no cheddar cheese in Mexican food and we never use it for enchiladas, I understand that it's difficult to find traditional mexican cheese like queso fresco in the US, and there are many Mexican cheeses that you can use for enchiladas like cotija cheese and Chihuahua cheese, which are the ones we usually use for this. Also, enchiladas are never made with tortilla chips, they're always made with corn tortillas and we never use flour tortillas. Man, this was really disgusting to watch and I was laughing at your reaction. Great review as always, James!!

Jack's recipes are the peak example of what a midwesterner thinks food is, combined with the Midwest being a massive food desert. His recipes reek of "this is what people scrounged up from a supermarket to try and badly imitate their actual recipe" energy.

I've been on a medical milkshake diet for 2 months and watching this actually makes me happy to continue it. We're all so shocked with pouring all that liquid on the tortilla chips - but the "browned" mince wasn't even browned

Kitchen speech is usually worse than what Ramsay does. People quit because they can't stand the way things go in professional kitchens. You better be able to take A LOT. Mostly, it's not even meant in a very negative way, more like encouragement or "I know you can do better". It just sounds harsh to many

Somehow, my memory of making cheese enchiladas under the supervision of my Mexican friend is so much different that this. He made me soak the corn tortillas in the enchilada sauce before adding the cheese filling. We rolled up the tortillas carefully, placed in a baking pan, and baked with the remaining enchilada sauce and Mexican cheese.

My wife and I do something similar with the sauce (we like to make a red sauce with guajillos to make enchiladas rojas), but after that we place them in a pan with some oil to fry them a little and then add our meat/cheese/potatoes (whichever you prefer, I typically go with chicken) and then roll them up in the pan to finish frying them (maybe flip it once or twice to make sure it's cooked evenly). After that we top then with the usual toppings: salsa, queso, crema, lettuce, etc. It's so good!

🤔😆 No, there are international laws that govern the conduct of war. And I'm very, very sure that it'd constitute a war crime to feed THAT to even airborne grunts, let alone army soldiers or marines. 😁 I've seen young 19/20yo infantry soldiers in basic training who prepared better looking, better tasting and healthier meals from the side dishes and stuff they had in their field rations. 👨‍🍳👌😀😉

You: "Hey, I've got this great recipe for -- Midwesterner: "Can I mix it all together, pour into a casserole dish, and bake it for 2 hours?" You: "No, but it's really good if you -- Midwesterner: "Not interested." Seriously though, I know prepackaged foods are a part of midwestern culture. In the 19th century, in the days before refrigeration, and not being near to any cities or coasts or...anything, really, they relied heavily on canned and dried foods. And that aesthetic never really went away. But...wouldn't you WANT it to go away? Now that you can get so many fresh and high quality foods even in the deep center of the country, why would you keep doing this? I mean, if everything is coming out of a can, bag, or box, why waste your time and mess up your kitchen? Just order a pizza.

Ngl: I grew up with my mother making sht like this. It is NOT enchiladas by any means, but it’s 100% some bomb a*s food fr!! Lmao! It’s the nice all in one dish style meal that you add a ton of random sht to and it’s absolutely amazing and filling and I usually throw it in a tortilla or dip tortilla chips in stuff like this... it’s a poor person’s casserole that just gets better the second and third days you have leftovers!!! Used to live on this type of crap 😂

This is closer to chilaquiles. Chilaquiles are fried tortilla chips with chiles, tomato, onions and a protein (optional) sauteed in a salsa and topped with cheese and cilantro. It's one of those refrigerator-clearing dishes (like fried rice) and will happily use up any stale tortillas and leftover meats from last night's big family dinner or party. As such, you see chilaquiles made in lots of ways and none of them are wrong ways. But with chilaquiles the tortillas are firm, not mush like this.

yeah thats a big part of hispanic food imo, not soggy mess but firm with the soft is important. Like I hate most texmex stuff with bland ass queso on everything but taco salad with crunchy chips is good.

Yeah, I made chilaquiles this weekend and they were NOTHING like this. I used some chorizo I had in the fridge rather than the leftover chicken I normally use, and they came out amazing.

I make something LIKE this, but differently. My family calls it "Mexican Casserole". We use corn tortillas, not chips. It's layered like a lasagna. Tortillas, meat, cheese, enchilada sauce, repeat. The meat gets fully cooked first, and you only bake it for as long as it takes the cheese on top to begin to brown and the sauce bubbles. That way, the tortillas still have texture. We usually top it with a "side salad" of lettuce, sour cream, salsa, guacamole, and cilantro. If we want enchiladas, we just make enchiladas. That's nuts. They just made a horrible soggy version of Chilesquiles from Hell.

I make Enchilada Casserole too and I use tortillas (tortillas should be gently fried in oil so they don't turn to mush), I use El Pato sauce for my enchiladas, and I don't burn the eff out of the cheese.... it's only supposed to be in the oven for max 15 minutes, only enough for the cheese to melt.....

but see, aomething like this as a lasgna when layered, can still work great. ench sauce to line pan, layer of tortillas, layer of steak or chicken with grilled peppers and onions, layer of cheese, more ench sauce, top layer of shells, cheese, some tomatillo sauce drizzle and sourcream drizzles. some olives, cilantro, diced tomato or pico...would be much more edible

In my opinion Chef James, it’s people like this that are destroying the ART of cooking, they have removed the passion in making a recipe and having it come to life in our cucina, this “lazy man’s” way of cooking is destroying everything for us, when I make a meal, as I would imagine that you do as well, I take a lot of pride in all the steps, leading all the way up to presentation, in my opinion, the best part of cooking, is watching people enjoy the food I’ve prepared, a lot of times I don’t even want to eat, I just enjoy the process. 10:00 with mentioning that shredded cheese is coated with powdered cellulose (so that the cheese doesn't coalesce into a one clump during shipping and sitting on store shelves). Cellulose doesn't melt, so it contributes a gritty texture to whatever you're making.

The face that you make when you see her mixing up that mess is breath taking, you made me laugh so much 😂 I had Enchiladas in mexico and even in a tex mex restaurant and they look nothing like this pseudo-lasagna mixture. We have an americanized thing here called the old el paso mix, and it's to make tacos, it's basically a fried tortilla un a "U" shape, so you take ground beef and you mix it with the powder and stuff and you make your "tacos" that way, when mexicans (from mexico) see that, they either laugh or they're puzzled. Making tortillas is so easy, it's maseca, water and a pinch of salt, if they would at least do that, stuff with the meat, onion mix and put that red sauce on it, it would have been better, but I have an idea of how you felt when you saw that muddy mess, so I understand how it looks disgusting especially after breakfast, thanks for making me laugh James 😁

I live in Arizona and I've seen this plenty of times, just usually with 6-in corn tortillas instead of the chips. But this is basically like Mexican casserole and it does not taste bad. I would probably use shredded chicken instead of the hamburger though.

@@ChefJamesMakinson Yeah, he thought it was great. I was able to wash it down with beer, and I'd just got out of the army and was used to MREs, so I lived. I don't think I could handle it now. You might find it interesting, the cooks assigned to infantry mess halls, don't care at all, but when I got a chance to go to mess halls for more laid back jobs, those cooks are really trying to put out good food. Proper omelets, to a degree. Meatloafs , good veg cooked decently. etc. They made an effort. And they are cooking for hundreds 3 times a day. I think being an infantry soldier was probably an easier job than what they had.

Im no pro chef, but i love to cook, and i feel like over the past few years, ive been able to develop my technique quite a bit. This is not something i would make when i was lazy, nor when i was just starting out. This is something my younger brothers would make during their mad science kitchen experiments during our childhood. I discovered a similar recipe when I was a kid (roughly 12) during a failed attempt at baked nachos. It wasn't half bad, and I still sometimes make it for the memories. Now that I'm in my 30's, I know how to make a good baked nachos. And I know the difference between enchiladas, nachos and a tortilla casserole, which is basically what they made using tortilla chips instead of regular tortillas. Still wouldn't trust Jack's cooking or tastebud's though...

As a mexican, living in México, this seems like a tex-mex version of Chilaquiles, here's a simple recipe for both. Green sauce: Boil green tomatoes (tomatillo) and blend them with onion, garlic, coriander, salt and green jalapeño or serrano peppers... the sauce must be somewhat watery. Red sauce: Roast tomatoes, onion, garlic and jalapeño or serrano pepers, then blend them with salt and coriander, add a lillte bit of water to make a more "fluid" sauce. Now, for Enchiladas: Take some tortillas, heat them in a pan adding a little bit of oil or lard, the idea is to slightly "fry" them, but not to make them crispy. Then fill the tortillas, like a taco, maybe with shredded cooked chiken, a mixture of aged cheese and onion or both, then pour some sauce on top to cover the enchiladas.... serve with some sour cream, onion and crumbled aged cheese on top. You can use, green or red sauce, or Mole if you ve some left, or refried beans blended to a sauce with some chicken broth ("enfrijoladas") For Chilaquiles: Cut some tortillas into little triangles, fry them in oil or lard until crisp, reserve. In the same frying pan, add the sauce and when it starts to boil, add the tortilla chips and let them absorb the sauce, serve topped with sour cream, shredded cheese and maybe shredded chiken, onion or serve them as a side disk for steak. In both cases you can substitute the shredded aged cheese with some "meltable cheese" like mozarella, Gouda, quesillo or Manchego cheese and take to the oven to melt.

Jacks lazy man series always drives me crazy because part of being a good chef/cook is knowing when a shortcut won’t sacrifice the end result too much and when doing things the hard way is worth it. You could definitely make “shortcut” enchiladas that are almost as good as making them from scratch but jack has such terrible judgement on taking shortcuts that he’d never be able to do that

I mean, at this point why not just go all the way with the "lazy man" route and just order out? Literally no cooking, not even driving if you get delivery. Just order and eat. Sure, if you order something really high quality it'll probably cost more, but quality obviously isn't the goal here so it should be pretty easy to find something that's not particularly any more expensive than the ingredients + cost of gas for driving to/from the grocery store.

I have been feeling terrible with a headache the entire day and hadn't eaten in more than 24 hours, but it was already past 11 pm and I had nothing in my fridge that would make a decent meal. So I ordered something from a shady delivery service where the reviews read it's a bit of gamble if the food actually arrives, but I was starving and nothing else was still open for delivery. I have already waited for an hour and was literally starving. Why do I mention this? Because then I remembered this video, came back to it, and suddenly, I wasn't hungry anymore. Even when my food arrived, two hours after the app said it was already delivered, I hardly felt like I wanted to eat anymore. It's magical.

This reminds of my elementary school food. My school was quite poor, and usually served the food cold as our heating lamps didn't work and the school couldn't replace them so only the fifth graders (who got to eat first) got warm food. And the food typically consisted of """pasta""" dishes with sides of a rotation of green beans, peas, or carrots and a slice of white bread with a pad of butter and skim milk to drink. Question for those who may have had similar public school experience, ours was so poor that we couldn't even afford to have enough teachers or classrooms where each grade had it's own separate class. All the way through fifth grade we shared at least two different grades in one room at the same (e.g. kindergarten and first graders, second and third graders, fourth and fifth graders). I never really thought where I grew up was a particularly poor area, but who knows. And it's not like this was a long time ago, this was early 2000s.

Whenever my mom made enchiladas using La Palmas, she would add some chocolate to it, specifically half of an Abuelita brand coco bar because it has other spices in it and adds depth to the salsa while also reducing some of the spicy heat. The sauce alone is pretty flat.

My mother and I do an enchilada casserole that's pretty 💣 but we still use corn tortillas and I make my own sauce which is way better I agree. Basically our recipe is unrolled enchiladas layered kinda like lasagna. Also I love using cotija and Queso Quesadilla cheese. Cotija also makes a better Alfredo sauce than parm does in my opinion.

Before I make what will probably be seen as a negative observation I would say I really like this review channel a lot. I like review channels in general because they watch the channels I don't want to pollute my feed with but I still have a morbid curiosity about them, and I love this guy's mixture of expressing disgust and being polite over what he's watching. Okay I noticed you use a Spanish accent when you name in Spanish ingredients, which I notice a lot of people do. But I've also noticed I don't hear this being done when chefs are talking about German food, or British food, or Chinese food, or Indian food etc. Why is it only the Spanish accent that gets emulated?

I am a big fan of chilaquiles, which are a shallow layer of chips covered and cooked (preferably from quartered corn tortillas which are then fried for this dish), also getting soft, which you then top with other ingredients when on your plate, but chilaquiles are top notch delicious, not drowned in sauce like this. This is disgusting. Where does he come up with his recipes, and why does he think this is okay? Sooo wrong. Your facial expressions are right on the money. I was doing the same right along with you.

My mom would use this method to make Chicken chilaquiles on the cheap using a whole rotisserie chicken and fresh shredded cheese - but what the hell? Classic simple Enchiladas are NOT that difficult to make and corn tortillas IS cheaper than chips!

Oaxaca cheese can also be very nice in enchiladas. I'll preface this by saying that it is NOT traditional, but I have found that a doing an enchilada casserole can be quite easy if you stack the ingredients like lasagna, but using the tortillas in place of the noodles. And as James mentioned, a home made sauce is always better, but in a rush I go for Hatch's out of New Mexico.

I could have made a fantastic nacho plate with that setup... Or a decent taco cassarole. Beef, onions, peppers, salsa at the bottom, crumbled chips with cheese mixed in on top... but she made them soggy, the one thing you dont want.

I am always amazed at Jack's inability to get better at cooking and thinking he is a food god or something. But, to have friends who are just as bad at cooking as him is an achivement. This is a war crime....

We have a similar dish to the actual enchiladas you described, in Brazil. We call them pancakes (panquecas), interestingly, and they are usually made with flour/milk dough.

This reminds me of 50s-70s midwest food that a lot of families still make, at least they have left the jello everything in the past, but it just reminds me how little some people in my family are unwilling to try new things and move into modern food culture

I grew up in New Mexico and stuff like this is a staple. It's usually called something like "green chili casserole", but it can be delicious. It always looks like slop, but as long as it's not straight up raw or burned, it's good. Basically idiot proof, which makes it a perfect match for Jack. Enchiladas are absolutely a different thing, but there's nothing wrong with this.

I remember the hotel pans from my hospitality and tourism class in my high school. (It was the grade 10 class that led to the cooking or baking. I took cooking in grade 11.) we used them A LOT especially for proofing our bread doughs. We sold a lot of what we made for catering so we often would see them then too. Definitely a super fun class and I miss the chefs so much I’m thinking of applying to work at the ones bakery. Edit: seeing that poor hotel pan be used for mixing up that textural nightmare makes me sad 😢
