Probiotic Rich Cinnamon Apples | Fermented February

Fermented Cinnamon Apples
3-4 organic apples (sweet)
1 tsp Himalayan salt
2 Tbsp cinnamon
Juice of 1 lemon
2 Tbsp fermented tea ( from Scoby) kombucha
Filtered or well water
Slice apples, peeled or unpeeled place in quart size, mason jar, add salt, cinnamon, lemon juice, and fermented tea, shake well.
Put a weight on top push down until liquid comes above the apples, put fermenting lid on top, let’s sit on the counter for about two days.
Happy fermenting !

I was excited to read in the comments that I could use apple cider vinegar instead of the kombucha. Don't have any of that at the moment. My husband and I love apples especially cinnamon. I can't wait to try this!

I used fermented rice water in my apples today. I will taste-test it tomorrow. Update: They tasted great. I did not ferment them for a total 24 hours. The apples were not sweet going in, but after the ferment, this combination of sweet, sour, and salty was delicious. I ate them within 12 hours. Made another batch, added candied ginger to the mix and used the same ferment "juice" from the previous batch..

Thank you so much for this. We're in the middle of moving from a big farmhouse into a little house so the kids can have the big farmhouse. This is a quick, yummy sounding ferment so I'm going to get some apples tomorrow and hopefully find some living kombucha to add in. I lost most of my ferments this summer, no idea. Most molded, and I've never had that.happened before.

So interesting, lots of good info. 300 square feet of living space encourages efficiency, for sure, lol. It's nice to know that apple cider vinegar can be used instead of kombucha.
