Speaking from experience: never overdo it with prunes or prune juice. Prune juice just generally tastes amazing, I love it, but I forgot they have the laxative effect - drank the whole container. It was not 5/5, it was a disqualified, because dear god I felt like my anatomy was tearing in two from the force and repetitiveness with which I was having to go to the bathroom. Not even joking, his fire hydrant comment was beyond accurate, I hated my life for around 12 hours.

I actually had a prune and duck sausage at a mom and pop place in Michigan. Well, it was assorted dried fruit but the prune was prevalent. It was smoked and I have no idea what spices they put in it but it was one of the best sausages I've ever eaten.

A butcher I've gone to sells a panceta, prunes and muzzarella chorizo (a common empanada filling here in Argentina). It's good though the muzzarella usually leaks out by the time the chorizo is done cooking. They put the prunes whole / in large chunks, so it doesnt get mushy. We also cook it on charcoals, maybe you could also try that some time.

You know, I once picked up a load at sunsweet, in California. Say what you want about prunes, but that was the most amazingly delicious smelling place I've ever been in my life. I thought the chocolate factory would be the best, and it was, for about 10 minutes, then I wanted to escape. It was too much. But I could probably live the rest of my life in that prune factory's parking lot LoL

Have you considered getting a second rack for your toaster oven? If you put one in the oven above the first rack you can set sausages on the upper rack for better air circulation and skin crisping, then set a small sheet tray on the bottom rack to catch run-off.

this episode had confirmed a deep theory in my mind, that the sausages may keep bursting all the time because there is way too much pressure within the casing straight from the press itself. I have a deep (possibly repressed) memory from years ago watching a butcher hand make sausages, and am 100% certain that while he was cranking with his left hand, he was also kind of "dragging" the casing off the tube with his right hand, to regulate the amount of filling per inch of casing. which mister sausage here would only be able to do if he utilised the bolt holes on the base of the press (understandably, may make for worse content, and who am I to question the integrity of his professionalism. but at this point I feel like he genuinely wants more successful sausageing, and this may be the key.) less filling per inch of casing means it will have space to shrink when heated, causing nice plump sausages and potentially less busting. I really really hope this may help. one of my all time favorite episodic shows, I love all the repeating jokes (personal favorite is the "sausage of the day flavour water") thanks

From my sausage making, we basically did what you said but use 2 people. One to crank the sausage press and one to regulate how stuffed the sausages are and coil up the stuffed casing on a wet baking sheet. You hold back on the unfilled casing while it's loaded on the spout and keep tension as it fills, then coil the filled part up till you run out of filling. Then tie off and pinch and twist every second link.
