Finally back to the classics. Taking a full meal, and turning it into a sausage.

You should take the curry liquid and reduce it then add it to the sausage mixture, so you get the flavor but don't add too much moisture to the mix

Whenever I see Mr. Sausage's face while he speaks, it's the same uncanny feeling I get watching the voice actor of a character I'm familiar with. I just expect him to look so much more like Peter Griffin than he does!

Mr. Sausage try freezing ginger, peel and all. It grates much easier and the peel grates up too fine to notice its there. Also stores indefinitely in freezer. You're welcome!

Next time you need an easy one, try Japanese Curry Roux sausage. The stuff comes in solid blocks that kinda look like chocolate, and you could just grind it up with some half-frozen pork and probably end up with something tasty if the proportions are right.

Have you considered getting a second rack for your toaster oven? If you put one in the oven above the first rack you can set sausages on the upper rack for better air circulation and skin crisping, then set a small sheet tray on the bottom rack to catch run-off.
