Whenever I see Mr. Sausage's face while he speaks, it's the same uncanny feeling I get watching the voice actor of a character I'm familiar with. I just expect him to look so much more like Peter Griffin than he does!

Next time you need an easy one, try Japanese Curry Roux sausage. The stuff comes in solid blocks that kinda look like chocolate, and you could just grind it up with some half-frozen pork and probably end up with something tasty if the proportions are right.

It tastes like pot roast with curry powder because that's exactly what it is. With not a lot more effort you could have made actual curry. I look forward to round two.
Mr Sausage, would you consider doing a taro bubble tea sausage? I think the purple color would really bring a sausage together. (I truthfully just want to see what tapioca balls would do to the grinder).
Every time I think this is going to be a pretty good sausage, he does something like add rice. Which is obviously going to bring down the flavor. It also most definitely reduced the moisture in the sausage

Obligatory suggesting of Ox Tail Sausage. Pan sear them first, for delicious reasons, before slow cooking (or similar) them until super tender! (Also, unless you don't mind paying full price, I'd suggest either waiting for them to go on sale or check to see if any butchers have them "cheap")

Have you considered getting a second rack for your toaster oven? If you put one in the oven above the first rack you can set sausages on the upper rack for better air circulation and skin crisping, then set a small sheet tray on the bottom rack to catch run-off.
The curry looked dry in the first place so I'm not surprised the sausage also ended up dry. Most curries I see are swimming in sauce. Well, paddling, at least.
