Obligatory suggesting of Ox Tail Sausage. Pan sear them first, for delicious reasons, before slow cooking (or similar) them until super tender! (Also, unless you don't mind paying full price, I'd suggest either waiting for them to go on sale or check to see if any butchers have them "cheap")

Have you considered getting a second rack for your toaster oven? If you put one in the oven above the first rack you can set sausages on the upper rack for better air circulation and skin crisping, then set a small sheet tray on the bottom rack to catch run-off.

Coffee grinder lifespan goes from by the kettle for coffee, to the spice rack, to the shed when someone tries to grind plastic or something, then landfill when the grinders luck is tested with some nails or a rock or something.

Yeah, salt would definitely help. I imagine with a bit of salt those flavors would jave come out WAY stronger. Salt, in the right amount, is a flavor enhancer, it doesn't just make things taste salty.

you could be on to something here. powdering anything like that opens to the door to a whole world of custom "seasonings" that would behave quite consistently. i don't expect that would be as exciting as the usual fare, but if you're secretly trying to vindicate exotic sausage flavors, then this could be a step in a promising direction.
