Queen Elizabeth II's Favorite Dessert

As an homage to the world's longest reigning monarch, today I am making a Tea Biscuit Cake (Tiffin). This is widely recognized to be Queen Elizabeth II's favorite dessert!
Ingredients:
8 ounces of tea biscuits, broken into small pieces
13 ounces of dark chocolate, divided
5 ounces of unsalted butter, softened
1 pinch of salt
5 ounces of granulated sugar
Strawberries and whipped cream as garnish (optional)
Method:
Lightly butter a 6" cake pan or mold. Lint the bottom with parchment.
In the bowl of a mixer, add butter, sugar and a pinch of salt.
Beat until light and fluffy. Set aside.
In a double boiler, over simmer water, melt 5 ounces of the chocolate. Take care that the water does not touch the bottom of the double boiler insert, or the chocolate will seize up.
Add the melted chocolate to the butter mixture and stir until smooth.
Add biscuit pieces.
Stir to coat thoroughly.
Press the mixture into prepared dish making sure to fill gaps.
Refrigerate for at least 3 hours.
After 3 hours, remove from refrigerator and let stand at room temperature for 30-40 minutes.
In the meantime, melt the remaining chocolate (8 ounces) in the double boiler.
To unmold the tiffin, run a knife around the sides of the dish. Invert it onto a wire rack placed in a tray to catch dripping chocolate.
Remove parchment.
Pour melted chocolate over the tiffin and allow to set (it can be refrigerated to speed the process).
Put on a serving plate and garnish as desired.
This dessert is very sweet, so I recommend cutting into bite size pieces for serving.

Thank you, Gail! If you do make it, I have a tip...the smaller the biscuit pieces, the easier to distribute in the pan and cut for serving! Mine were a bit too big.

Ah, I found out about this cake she enjoyed a while back and have been meaning to make it myself :D I am delighted to see you have made one :D Seems oddly less like a cake and more like chocolate biscuits! :D

I couldn't agree more. In fact, it's really more like candy. I cut it up into little squares and served it as such. But no matter what it's named, we can call it "delicious!"

Gotta make this...also chocolate goes to biceps...I need more chocolate. BTW I saw the Queen and Prince in Cambridge walking from their "car" to Kings College for a conference. Of course, it was raining.

Oh my God! I might have to make that. I'm trying not to eat so much sugar but it would be disrespectful to the memory of the Queen not to at least have have a small piece.
