QUICK AND EASY VEGAN SUSHI

I love making vegan sushi! It is a fun activity to make with family and friends, on a date night or even by yourself! I ate this all the time throughout my weight loss journey too! (if you are trying to loose weight, just take it easy on the avocado and the sesame seeds). You can really pair any veggies or even fruits of your choice to make a fun and flavorful roll. Just have fun with it and enjoy!
Ingredients:
Nori Sheets
Rice (Normally you would use short white rice but I used basmati brown rice to resemble what I ate during weight loss)
1 tsp rice vinegar (mix it into the rice)
Mangoes
Cucumbers
Baked sweet potatoes (I chopped them up into matchsticks so they would bake faster, put them over parchment paper with no seasoning and placed them in the oven at 420 degrees Fahrenheit for 20 minutes)
Avocado (If you are loosing weight, make sure to take it easy on the avocado as it is higher in calorie density. I used a total of 1/4 of an avocado in between the three rolls).
Garnish
Black sesame seeds (take it easy or omit if trying to loose weight)
Pickled ginger
Sauce:
2 tbsp tamari soy sauce
1 tbsp rice vinegar
chopped green onions
chili flakes
Tips:
1. Wait until rice gets to room temperature before making your roll. If you put the rice into nori while it's hot it makes the nori is going to taste more fishy.
2. Wet your fingertips before spreading the rice into your rolls. This will help the rice to not get stuck to your hands.
3. When you are rolling your sushi, make sure to roll it tightly. First roll the first half of your roll tucking your ingredients in. Then release mat for a quick second and continue rolling until you reach the other edge of the nori.

Great video. Re: the rice, what brand? What is your water/rice ratio and cooking method/time? It sounds like you used the rice the same day you prepared it?

Thank you!! I get my rice at sprouts in the bulk section. I usually cook my rice in a rice cooker which gives me a measurement of how much water to add based on how much rice I am cooking. If cooking on the stove, the ratio is two cups of water to 1 cup of rice. And yes, I used the rice the same day I prepared it! 😀
