Although this is a meal that can be prepared year round, I think it’s perfect for the holidays. This Rack Of Pork, smoked on the Weber Kettle Performer, gives you a beautiful piece of meat to present for a joyous family gathering.
Rub Ingredients
¼ cup Olive Oil
1 tsp Kosher Salt
1 tsp Smoked Paprika
½ tsp Coarsely Ground Black Pepper
½ tsp Chili Powder
1 tsp Dried Black Garlic (or Granulated Garlic)

Did this very same thing. It is an excellent way to prepare a pork rack. It turns out fantastic. The Weber is very under rated. Charcoal started with a chimney instead of fluid is also a game changer.

One of My favorite cuts. I know it as pork rib roast. A full one is 13 bones I believe. Great on a rotesserie too.

Hey Ry WOW that looks amazing even without the sauce put some in ago box and send me some. Just kidding. I do have a question at the beginning of your video it looked like you used charcoal with wood chips in it how does that work for you? I tried charcoal with wood like cherry or maybe hickory whatever in it and it seemed to burn hotter and faster that normal charcoal bricks did. Have you noticed that to or was it just me. I would like wish a Merry Christmas to you and your family.

I happened to have a bag of Kingsford with those wood bits embedded and just decided to use that. I didn't notice it behaving much differently than the regular, to be honest. A slightly woodsy smell, maybe :)

Great cook Ry ! I'm looking to buy the Malory firewall for my Weber Performer. My question is , do you prefer this or the slow and sear basket ? Or , is the bottom grate worth the price by itself ? Thanks for your response !!

It a really beefy, well made unit. I don't look at it as a replacement for the Slow n Sear. The SnS does so great on longer cooks. I like the versatility of the Firewall for adjusting that indirect zone, and its ability to act as a heat sink, especially when paired with the cast iron grate. That really helps temps recover when the lid is off for a bit.

Do you find the charcoal grate and divider by Mallory to be better than the slow and sear? I’m really wanting to get it because you can make your indirect zone as big or small as you want. Any info is greatly appreciated sir!

Hi! They really are different beasts. The SnS does better at long cooks because it is designed for that. The Firewall excels at exactly what you mentioned-control over zone size.

Looks amazing. I love pork! Quick question: I saw you didn't remove te membrane on te bones like you would with ribs. Do you have specific reasons for that or is it just something you won't taste if it's there?

No. Those are often cut from pork butts or sometimes loins.

Is it normal that the rack of pork membrane stinks right when I open the package and rip the membrane off? Now the bones under the membrane smell a little funky.
