Canning Green Beans using the Raw pack method in our All American pressure canner. Starting from scratch in pressure canning and want to know the basics? Here is a video of me teaching a fellow homesteader how to pressure can green beans, and remove all the scary out of the process ♥
All American 930: amzn.to/3ltL6nc
Masontops Kit: amzn.to/3A7RKDK
wash beans in vinegar rinse thoroughly
snap end off and snap to desired length
pack jars firmly with green beans to 1 inch head space
fill jars with hit water
put lids on finger tight
place in canner and seal canner lid
let canner vent steam for 10 mins
apply weight gauge
process jars for your recommended pressure (for our elevation it's 10lbs) for 25 mins
turn off heat and let pressure release naturally
remove weight gauge, once pressure is to 0lbs allow any remaining steam to escape
unscrew latches from lid, but do not remove
wait 10 mins
remove jars and place onto towel to cool for 12-24 hours before removing rings and storing

Thanks for this video. I fill my jars half way, jiggle/shake/poke the contents down, add the first half of the liquid, and de-bubble. Then I repeat that process to finish filling the jar. I get more in the bottom of the jar that way with less wasted space. I find it quicker and less messy to pour my liquid out of a teapot or pitcher rather than repeatedly ladle from a pot.

My husband and I watched this video on Friday night and went out to the Amish farm stand on Saturday. We purchased a huge amount of beans (or so I thought). Sunday I put up 7 quarts just like how you did in your video. Something I haven't done in 25 years when my girls were little. I followed your instructions and they came out beautiful. Thank you for for the basic teaching method that helped me gain confidence. Not only did this huge bag give me 7 quarts, I have 5 1lb bags in the freezer and we just had some for snacking. Ideally we would have grown our food but being a manager of a manufactured home community we don't own our land. Hubby said last night, he wanted to go out get 40lbs of tomatoes and more beans to put up this weekend!!! Rachel, thank you again for showing us that you can still preserve even if you work full-time and may not have garden space!!!!

I have been canning most of my adult life, so being that I just turned 67 years old...OMGosh that's about 50 years 😲 My favorite vegetable is green beans - so I try to get as many canned as I can. Depending on how my harvest turns out. It's so satisfying to know that I grew them and can put them up for the year. I grew up using a pressure canner even for cooking dinner. Fast & easy way to make a pot of mashed potatoes for a big family! Only mishap I ever had was taking the lid off of my pressure canner too soon when canning tuna, and it syphoned out and I got 3rd degree burns around my waist where the boiling hot water soaked into my jeans. I never moved so fast in my life! Straight to the shower, stripped and turned on the COLD water!!! OUCH 🙄 - I never did that again...

I love your measurement of the vinegar in the water! Made me chuckle! Little tip if you have hard well water....add about a 1/4 cup of white vinegar into the water in the canner to prevent that white film from hard water. Love the channel! I am not sure you expressed that the pressure needs to reach 10 pounds before the timer starts. I have been teaching canning classes and have found that I also have not expressed how important it is to wait until it comes to the desired pressure before starting your time.

Yeah. We extended our garden with store bought organic potatoes in food grade 5 gallon buckets. I have extra for later planting after the harvest is done. All winter I bought organic scallions and cut 2 inches at root end, rehydrated in water. Changed the water every two day. I clipped all winter to eat. Spring time I planted all around the garden edge to keep bunnies out. It works. I cut outer leaves of swiss chard and they produce until freeze.

I love that you did this video! It is the perfect video for new canners or anyone that has been fearful or unsure. There are many great videos out there, but there are many times that questions a beginner might have get overlooked or not thought about. This is the first video I’ve come across that has a seasoned canner and a new canner working together. Such a great idea! It was great being able to see both perspectives and be able to see you walk her through her questions or fears and give suggestions for troubleshooting. I have had a canner for over a year and have yet to can anything because I was unsure about certain things. This video gave me the answers I’ve been needing and I now feel confident that I can start canning. 😁 Thank you! Thank you! Thank you! ❤️

I've Bern canning all my life , and fed my family well. My veggie soup is locally known by many. I love that your trying to get the younger set more interested. You are so right, It is not a scary thing. Side note, love your "pickle pusher' bit I learned old school. "Pack em, til they push back' they'll likely never be to tight. And your head space. Grandma always said, "Fill the jar to its shoulders" The pressure part does need minding, and as stated, finding the right time to set your timer, is the hardest part, depending on the age, and design of your canner. Definitely easy to over do, or under do, which is why "watching you pot" is imperitive. Now days much easier with gages. But I learned on pots without them, and you learned to trust your ears. Anyway thanks again for teaching to a new generation. This is a lifestyle, that people should get reacquainted with.

grape leaves, horseradish leaves, tea bags, bay leaves, all help keep pickles crisp from my experience .. last year I put a bay leaf in each jar and they were sooo crisp and good .. my 5 yr old granddaughter only likes Grama Laney's juicy pickles won't even try jar pickles! So adorable! beautiful harvest .. we are encased in smoke here in the mountains in BC .. it's really nasty and hot ... still pushing through with getting what I can .. if we had experienced a natural summer here I would be overflowing with produce .. not so much this year! Next year will giver a go again ....

I pressure canned for the first time today! I did dried beans, and I did soak them overnight. I think it went well! They all pinged. I had one jar siphon a bit (maybe didn't debubble enough!?). I have enjoyed all your canning videos- thanks for taking us with you!

Hi Rachel - Thank you (and Todd) for all that you teach me! I enjoy your calm manner and conversational way of teaching. Questions: 1)What is the smallest number / size load I can process in my pressure canner? Ball says: 2 Quarts or 4 pints or 8 half pints. What is your personal experience? I do not have 14 pounds of beans, but I have enough to can 3 pints. I was super excited to can my tiny harvest, just to gain experience - but my excitement was dashed by the load requirement. 2) Also, do I have to 'waste' lids on jars of water added to the pressure canner, to take up space if I don't have a full load? Can I just set the 2 Quarts / 4 Pint jars of product in the canner and not worry that the canner isn't full of jars? THANKS!

Home canning is awesome but some years are better than others. I made the worst pickles last year. I had to throw them all away. This year they are so much better.

With the Presto canner if you store with the lid just sitting upside down on top of the base. In other words not cinched down like it would be while using it. The gasket should last years if stored like this. If you store the Presto with the lid tightened down you will be lucky to get 2 years of use.

SO love your videos! My (Ukrainian) wife was so scared she ran into the bedroom as the Presto came up to pressure. Her babushka didn't have the safety features we have today. I use a 10PSI wobbler, btw. I'm 65 and remember my mom canning all our garden produce back in the 60s & 70s. So great to see someone new getting into it. I saw your video about buying #10 cans of stuff to can. What do you think about buying bulk frozen veggies to can. Just thaw em first, of course. I've dehydrated a bunch that way too.

I believe the head space is so that food won't float up and interfere with your lid seal. It's also the reason why you let the canner depressurize and then let the jars sit in the canner, cooling very slowly so the liquid won't siphon out, taking any food particles with it and messing with your seal. Also, a splash of vinegar in your canner water will prevent any cloudiness on your jars. That goes for water bath and pressure canning 🙂 Great tutorial, and great info as far as planning how much food you need to preserve for a year!

I enjoyed the refresher class. I wanted to say that I think Stacey was a little shy with the debubbler. I thought we were supposed to slide the debubbler all the way down against the side of the jar, to the bottom of the jar, then press inward toward the center of the jar. I suspect I may be a "helicopter canner".

My mother was a victim of a pressure canner blow up. Fortunately, the stove had a double oven so the lid hit the upper oven. She was burned some and cut but nothing serious. She thought she had not gotten the lid on properly.
