Really Quick Chicken Ala King

This dish is very rich and tasty, it only takes about 30 minutes to make and can be served over some type of pasta or rice. Serves 4.
Here are the ingredients used:
2 cups cooked and cubed chicken
1 red and one green bell pepper cut in 1" cubes
1 small onion chopped in big chunks
8 ounces sliced mushrooms (I used Baby Bella mushrooms)
1/4 cup butter
1/4 cup of all-purpose flour
1 cup chicken stock
1 cup heavy whipping cream
4 tablespoons cooking sherry
Dash of Nutmeg
1 tablespoon fresh parsley, chopped
Salt to taste
Serve over rice or your favorite pasta.

My Dad is in town visiting. I think this will be first up for our home-cooked dinners. Haven't seen any version of this in ages, but I always loved it. Great comfort food. Excellent tip on the parsley and cilantro, thanks for that, so easy. You are the Freezer Queen. 👑

What a beautiful plate of food. I love the different colors in your meal. I really like this nice simple recipe with simple ingredients. I remember my mother making chicken a la king when I was younger. She would always have those chow mein noodles and then put the chicken a la king on top of chow mein noodles. We all thought it was a fancy Oriental meal not our normal meatloaf meal. Mother would also fix those fancy egg rolls out of the box with the chicken a la king. And of course didn't forget those fortune cookies on the side. ;-);-);-)

My father used to have Chicken à la King as a special at his restaurant. No peppers and it was served on toast. Thank-you for showing this to us!

Yummm, good stuff, my mom used to make this for us . My stepdad didn't like it, so when he went on second shift for a month we ate whatever we enjoyed 😊😀 !! Can you imagine , he rather eat sandwiches & watch TV while he ate rather than a good homecooked meal & family time...his loss !!! Looks delicious and brings back memories . My grandmother used to make it with same ingredients but no green peppers , only red ones and served it over fresh made biscuits. Thank you for reminding me of this wonderful dish .

I air dry my celery leaves. Put on paper towels and cover loosely with paper towel. Lay that on a cooling rack. Stir a few times a day until completely dry. Then place in a recycled spice jar. Will now try it with cilantro and parsley. Thanks for the great recipes. Went to Walmart today but they didn't have the Purdue chicken breasts at ours. I did get hash browns for the quiche like dish on hash browns in a pie plate. So many recipes I want to try. If possible, could you please, please, please do some more Instant Pot savory type recipes? THANK YOU 🙌

Ymmmm....I declare Miss Phyllis, with your FINE COOKING, Mr. Bucky sure does eat great, just look at the presentation, when food looks as great as this Chicken Ala King with the cucumber/tomatoe salad and the peaches and peach jello dessert, you know beforehand Mr. Bucky's gonna rate it a double thumbs up! ;)

You are very smart about freezing items. I am starting to do the same with the smoothie cubes and other vegetables. I always seem to be throwing out produce because it goes bad so fast. Thanks for the great tips!

I also freeze pafseley and cilantro, I wash them and when they are dried, I chop them to my taste, then in two different plastic containers, I put them between two folded kitchen towels, i add the parsley and in the other the cilantro. On top put another paper kitchen towel, then close the containers Very well. I do not add water, they stay frozen and the leaves stay lose, when I need some, I take a little as needed. Although they are brittle, it works great for sauces, soups, etc. I liked the chicken a la king very much. My mother used to make it and she would serve it over toasts. Best wishes from Chile

Not the best thing to watch b4 bed cuz now my tummy is rumbling and I'm starving!😂 That's so delish looking!!! I love everything in it and ty for teaching people it's ok to use nutmeg. I'm Swedish so we use it in everything and we cook with a lot of milk, cream and butter... nutmeg just gives it a warm flavor boost--nothing over the top. Ok I gotta go eat something cuz this has me drooling😂💗💗💗

Looks good, brings back some memories. I used to work in restaurants way back in time and at this one Called The Clarmont I would make 2 5 gallon pots of Chicken or Turkey Ala King, even though it was sold one cup at a time it would be gone in 2 days.

I haven't eaten this in a long time. I'm going to have to cook it soon! Love the tip about freezing fresh parsley and cilantro. I never use them up fast enough either, and hate to buy something that I know will have to be thrown out.

A tip for keeping cilantro fresh. I’ve never tried parsley but it might work. Trim the ends of the cilantro off with kitchen shears just as you would fresh flowers. Fill a small glass with about an inch of cold water. Set the bunch of cilantro in all the way ,touching the bottom of the glass. Then tent it with a sandwich size zip lock bag. Place in fridge and it will keep at least 2 weeks

I started doing this method too, and it really did enhance the shelf life. I do it with parsley and it works just as well.

My mother used to make this occasionally, and buy the Swanson canned variety as well. I hated it as a kid, but it looks so yummy to me now! Ha! She served it on biscuits or toast, if I recall. I'm going to make this! :)

I've only just discovered your channel...I wish you a speedy recovery. Just like everyone else in this comment section...you've taken me back many years. I never knew why I loved this as a child...I assumed it was made different than the can version...which is NOT what I remember at all. For one...my mother never put peas in anything...and it seems most people do. And we always had it on egg noodles too. 😋 pimentos I remember and always onions. Finding that it's made with cream explains why I loved it though! Seems I always loved the richest and most fattening of anything..lol. Anyway...I'm so glad I've stumbled on your channel! Jell-O led me to you. ♥

My Mom use to make this & Serve it in those Frozen Puff Pastry Cups!! It was So Good! And.. Serve Buttered Rice with it!!.. I haven’t made this for decades.. But yours looks So Tasty.. I will try it (without the mushrooms)!!! 💓💓😘🤗😋🙌🙌

Hey Ms Phyllis, that looks interesting! I've never made ala king with peppers n onions before. I might have to try this. With mine, I saute the mushrooms, add the white sauce ingredients along with nutmeg. Then I add a small jar of pimento strips, a couple handfuls of frozen green peas and the chicken. I do not add the Sherry because then it tastes like Newburgh. I serve mine either over rice, toast points or puff pastry shells. This is my husband's favorite after Thanksgiving leftover where I replace the chicken with turkey, lol....

I am going to try your version as I haven't ever added sherry and used pimentos instead of fresh peppers. I think the wonderful taste of the fresh peppers overrides the convenience of simply opening a jar of pimentos. At my house, my guys always request Chicken ala King over homemade biscuits so I guess I have to stick with that.

I have never made this dish but have heard of it. Definitely will make it this Fall. Please say “Hi” to Mr. Bucky! Sometime if you would talk about how you organize your freezer with all the prep veggies and completed dishes that would be helpful. I imagine you have a seperate freezer that is an upright. Anyway thank you Ms Phyllis for sharing your cooking with us all! 💐

Hi Phyllis, here's a recipe from my aunt Alma, she used to make this for breakfast when I was growing up. called Tomato gravy. Served over grits cooked to package directions. 2 cans Delmonte ( basil, garlic and oregano diced tomatoes ) 16oz cans. ( this flavor makes a difference ) 8 slices crumbled , crispy bacon reserve approx. 3 to 4 tablespoons of the bacon drippings . add about 4 tablespoons sugar . ( or to taste as it cooks ) in frying pan used to the cook bacon, reduce tomatoes to a bit of a thick consistency adding sugar and crumbled bacon and cook on medium low uncovered for about 15 minutes . I would love to see you make this and let us know what you think ! Thanks Joyce Orlando , Florida
