For many months now, we've been craving for good old Filipino ensaymada, the type that rivals the best ensaymadas only available back home in the Philippines. We have scoured youtube for the perfect recipe and tried many, only to be dismayed with the finished product. Sadly, the reality is that not all recipes presented on youtube are accurate-you know this when what you end up with is totally far different from theirs. And quite frankly, it ends up just being a waste of time. Having tried Chef Kurt's and his husband Donald's recipes, my mom, wife and I knew at the onset that their channel was legit. All of the measurements are spot-on, the procedures are laid out step-by-step and in an organized fashion. They do not withhold any of their secrets. Listen to how clear they are in presenting. It also counts that they are O.C. In other words, WHAT YOU SEE IS WHAT YOU GET. And that is none other than honest to goodness recipes! This ensaymada recipe has the texture and moistness we've been longing for. Truly, gourmet! My family and I are big fans of this couple. They are a breath of fresh air and a constant source of light in these trying times of a global pandemic. I won't be surprised if these guys get picked up by mainstream networks, or perhaps start a show on Netflix or other streaming platforms. They are that damn good. I made it today. My dough was really wet. I know all my ingredients are correct using my scale. But you know it is rather warm her in SoCal. I used my KA mixer. I added one tablespoon of KA APF till i got the right consistency and window pane test. I did not proof overnight in fridge since I am craving for it. I proofed it only for 7 hours in fridge while I did my errands and laundry. Ha ha. The final proofing was 2 hours. Each dough was 73 grams total of 12 pieces. I baked it for only 15 mins since internal temp was already 198 degrees. Final product is nice soft pillowy fluffy! I used sharp cheddar cheese since thats what I have. I added a little bit more of granulated sugar over grated cheese besides the confectioners sugar with butter. Yummy! Thanks for sharing your recipe.
i normally don't comment on recipes i follow on youtube... but.. O.M.G... this was nothing short of mouth-watering and amazing result. i used a mixer (i'm not for muscle building.. hehehe) I added ube extract to the dough as well. althought i didn't have the molds.. the result was just to die for. thank you!

Everytime I want to make something of anything, I always check your videos and see if you have it on there coz I’d rather make your own version than any other version on RU-vid! I’ve made a lot of your recipes and it never disappoints me! It’s very good. That’s understatement actually! If there’s a better words of best then that’s it. You are a good cook Kurt! I don’t know if you have a restaurant or bakery but you need to open one! And please get a stand mixer! It seems like a lot of work for you when you’re making the ensaymada! You deserve it! I don’t want you be tired doing all that. God bless you and everything you do. And trust me, I don’t make any other peoples recipe! Only your recipe I trust coz it’s proven and tastes and tested. Hi Kurt, thanks for this video. I followed all the except I used bread flour. The ensaymada is super soft. I used my stand mixer. But I need to practice folding the dough. I also loved your makes mango cake. More powe to both of you.

This is different from most ube ensaymada videos I've seen. BUT this is the recipe qui donne envie. I'm overwhelmed with all the recipes out there and scared to screw up hahaha. Hello chef Kurt and Donald, do I need to cover the dough for 30 min before adding butter salt and sugar if I am using a stand mixer? I can’t wait to try your recipe, thank you so much.
Hello. We provide instructions on how to make this dough using a stand mixer in the video starting at the 4:49 mark. Using a stand mixer is very simple. Just put all your dough ingredients into the stand mixer mixing bowl, all at one time, and turn it onto medium speed (about level 4 on kitchenaid) and let it mix for about 20 minutes, or until your dough passes the windowpane test, then continue the rest of the recipe like in the video. There's no need to heat the milk, no need to rest the dough, no need to add the various ingredients at separate times, no need to dissolve the yeast etc. Hope this helps! :)

How to store leftovers to retain the softness/freshness of the ensaymada? I’ve done it today and made the recipe doubled and planning to share some tomorrow to my friend. I just want to make sure it’s still soft on the next day. Thanks for the recipe it turned out really good.
Hi Danielle - thanks for your comment! Glad you that your ube ensaymada turned out well!! Like with most bread, I'd suggest storing ensaymada with no cheese topping in an airtight container at room temperature if you're eating it within 24 hours. For longer than that, I'd suggest freezing - and thawing/reheating before serving. If cheese is already on top, I'd suggest storing leftovers in the freezer immediately and thawing/reheating before serving. Hope this helps! :)

@@cookingwithkurt yes all fine thanks for asking. 🙏 So this recipe yeilds 12 ? I'm so engrossed thinking if I should do this by the hand milling method so I may have missed it. I do my croissants by hand as mixer result isn't the same. And the folding turning of this dough is very very similar... Hmm. I'd love you to share your version of pain au ube (a la pain au chocolat) 💜💜💜 That would be a yummy treat 😋
Hope you can find ube halaya also :) If ube halaya is not available, you can use reconstituted ube powder to make an ube paste. Or just leave out the ube completely to make plain cheesy ensaymada. I'd suggest sprinkling grated edam cheese in place of the ube filling before rolling up the dough. Hope this helps! :)

Hi Nerie - I don't have a bread machine so I have no personal experience with it. But I believe you should be able to make this dough with the same ingredients and just follow the procedures you know how to do using your machine. Just let it complete its kneading cycle, and then continue the recipe like in the video. Hope this helps! :)
